Asian-Inspired Mustard Greens

This a great recipe. I used wild mustard from the nearby orange groves so it was fairly hot. Doubling the sugar helped. This recipe would probably be awesome with mild mustard greens.

Cajun Style Baked Sweet Potato

Absolute yumminess and a very affordable side dish. I ate them with ketchup - my family ate them plain. My son could not stop eating them and though there was a half pan left over after meal time, they were gone before bedtime.

What a nice flavor. You don't even realize there is no meat in this dish. We had with with Cajun Sweet Potatoes for a delicious complete vegetarian meal.

Italian Sausage Soup with Tortellini

The broth of this soup is very tasty and smooth. The goodies (sausage, tortellini, carrots, zucchini, etc) were nicely appointed and each was complimented well by the broth.

Crispy Rosemary Chicken and Fries

Cut the thighs in half to make smaller pieces. Added a chopped onion for extra yumminess. Agree with comment to lessen the olive oil. Turned oven on 'broil' at the end to get the desired browning. Served to out-of-town guests and we all loved it. They asked for the recipe. Will have this again soon.

Puerto Rican Pork Roast

This was a very tasty roast and came out very nice. I just wasn't too sure about the stuffing instructions. since it was a pork loin it had no strings. I cut it in half and slit and stuffed the sides and put them together. All was held in place with bamboo skewers.

Chocolate-Filled Poppy Seed cookies

My oldest son and I like these cookies. My wife did not. They are neither chewy nor cakey. They are crumbly like I would imagine a British tea biscuit. I made them normal cookie size (2 inches). I think next time I will make them half that size in order to be able to just pop them in my mouth without crumbling them while biting them in half. Over all, a nice break from standard cookie fare.

Quinoa Salad with Dried Fruit and Nuts

This is a unique and delicious salad that is given a slightly nutty/smoky flavor by the sesame seeds. Hard to stop eating. As with many other recipes that call for raisins - we substituted craisins.

Candied Sweet Potatoes

This one appropriately titled - emphasis on 'candied'. It was delicious but if you're looking for a regular sweet potato casserole, this is not it. I enjoyed it along with my cornbread stuffing but I had some complaints that it was too sweet. Also, the chunks were not as well-received as a thoroughly mashed mixture by my family.

Roasted Vegetables

Talk about a sure-fire recipe. This one comes out great every time. It is a wonderful side dish for roast or any meat. We have served it company on more than one occassion and it was very well recieved. Thanks for a great recipe that's also simple.

Gorgonzola Pear Pasta

This recipe was a perfect balance of flavors with the savory cheese, sweet pears, and nutty nuts (I used toasted pecans). The whole family liked it. I served it with olive oil sauteed brussels sprouts (quartered), carrots (julienned), onion, and garlic for a complete vegetarian meal.
