These were delicious. The cake part turned out light and fluffy, with the perfect amount of sweetness. I ran out of sour cream, so as instructed by a previous reviewer, I substituted vanilla yogurt for the remaining half cup of sour cream. They turned out great!

Lemon Cream Cheese Frosting

This frosting was okay. I used it on top of the "Lemon Cream Cupcakes," and I thought it was just too sweet. The recipe calls for 5 cups of confectioners' sugar. I used 2 cups, and even that was too much. I might try making this recipe again, but I'll definitely be cutting back even more on the amount of sugar!

Pollo Fajitas

I tried this recipe last week in an effort to replace the McCormick chicken fajita seasoning that I ordinarily use in making chicken fajitas. This recipe makes the dish taste just like it does when I order it at a restaurant. We will definitely be incorporating this meal into our weekly rotation!

Stuffed Pork Chops

Excellent! I used seasoned Pepperidge Farm stuffing, and rather than bake the pork chops in the oven, I simply placed the pork chops and beef broth back in the pan I used to saute the onion and celery, and I covered the pan with a lid and cooked over medium heat for 8 minutes. One less dish to clean, and half the time of baking. This was amazing - my husband hates pork, but he loved this.
