Mom's Best Macaroni Salad

Reviewed: Apr. 6, 2011
I think you will be fine with this as long as you add the sweetened condensed milk a little at a time and do like grandmothers did, use your personal taste to judge how sweet you want it. I did omit all of the sugar. This was great. Tripled the recipe for a crowd of about 60 people and the bowl was clean at the end of the reception.

Grandma Johnson's Scones

Reviewed: Feb. 13, 2011
I wanted to do a trial run for a scone recipe as I prepare for my daughter's sorority tea later this week. I can not imagine how this recipe could be any better. Absolutely delicious. A couple of hints - make sure the butter is fridge cold, cut up in small squares and work the butter through the flour with your hands until the consistency is like rough cornmeal. Everything will work together nicely and you will barely need flour to roll the dough out. I added in blueberry infused cranberries instead of the raisins and after coming out of the oven, I drizzled the tops with an icing made of confec. sugar and fresh lemon juice. I also found that the scones were too large so I used a quarter of the dough at a time, cut it like pizza to make smaller, cuter triangles.

Avocado, Tomato and Mango Salsa

Reviewed: Jul. 20, 2010
Delicious. I am a garlic lover and found that 3 cloves seemed a bit overbearing. The next time I made it (the next night :-) I used 2 and it was perfect.

Grandma Minnie's Old Fashioned Sugar Cookies

Reviewed: Dec. 8, 2009
This is my second time reviewing. I have been baking sugar cookies for over 30 years and this recipe is by far, the best I have used. My hints: Wash your hands thoroughly and use your fingers to cut the butter into the flour until it is like corn meal. Use the butter straight out the fridge. If the dough is a little softer and shiny, chill for at least an hour (wrapped in some saran wrap so as not to dry out). If it is matte and like play dough, you can roll it now. Using a thin, metal spatula dusted with a little flour worked better on getting the cut-outs up than a plastic one. I baked mine at 350 for 5 - 6 min. This was for thinner, crisper cookies rather than soft. Watch the batch closely and allow it to brown slightly if at all. Allow the cookies to finish baking on the cookie sheet for about 5 minutes. Let it cool completely on the cookie rack. I did not have cream but had a can of low-fat coconut milk and used that. My gosh, I think that might be a secret ingredient for sure. It added a neat creaminess and a flavor but it did not taste like coconut.

Holiday Chicken Salad

Reviewed: Dec. 8, 2009
I made this recipe for my daughter's baby shower. Doubling this recipe was enough to make about 100 party rolls. This is the best chicken salad I have ever eaten. One of my friends came across the room and practically begged me for the recipe. You will love this! Update: Made these for my daughters sorority sisters at college and they asked me to make them for 3 different occasions this year!

A Simply Perfect Roast Turkey

Reviewed: Nov. 27, 2009
This turkey tasted fantastic. Now, after years of struggling to figure out the best and easiest way to make a good amount of rich turkey gravy, I have the answer. I didnt have any turkey stock but had plenty of chicken broth. I used this at the bottom of the pan along with the neck, giblets, whole carrots, celery stalks, 2 small onions and a couple of sprigs of fresh rosemary and made some of the best gravy ever. I made sure to use a fat seperater cup though.

Vietnamese Fresh Spring Rolls

Reviewed: Jun. 22, 2009
I made these last summer and have started again this year. You taste unique flavors with each bite. Nice and light for snacks or entertaining. The peanut sauce is the final touch of flavor that makes you want one more for the road.
