Spinach and Mushroom Pinwheels

The taste was wonderful but the dough was a huge pain. It was easy to make but a hassle to cut. No matter how long I chilled the roll, it was next to impossible to cut it without squishing the whole thing flat. If you have the time and patience for this, it is completely worth it. So yummy! Just don't expect nice clean, even spirals!

Kerri's Holiday Punch

Fantastic! Bubbly, fruity, and you can't taste the alcohol. My kind of drink! I used 2 liters of soda (the readily available size) and it tasted perfect. Helpful hint: I froze the lemon and orange slices and found this kept the punch cold without diluting it (as happens with ice).

Baked Cheese Olives

Everlastingwhy had the right idea with this: double the dough, lightly flour your olives, and be sure to use a food processor. Additionally, I found it helpful to let the olives drain for a bit on a few layers of paper towel. Removing the excess moisture kept them from getting soggy while cooking. With some tweaks to the instructions, these were a HUGE hit. I served them a few hours ago at a party and they went over so well that I had to come on here and review them. A labor intensive but absolutely delicious appetizer! Love that you can make them ahead and freeze them.

Coconut Curry Tofu

Just a fantastic curry recipe! Great flavor and surprisingly healthy, especially if made with light coconut milk. I'm vegetarian and my fiance is very much not vegetarian, and both of us enjoyed it equally. Bonus- it's very easy to make. And as a sidenote, some people have complained about the consistency, but curries like this are supposed to be thin. They're intended to be served over rice. Don't expect an American-style thick, creamy sauce.
