Chicken Enchiladas V
I made these for company and they turned out really good. I ended up with only 6 enchiladas instead of 8 (personal preference for more filling instead of more tortilla) and the entire pan was demolished! I made it a lite by using 98% fat free cream of chicken and fat free sour cream and no one could tell the difference. This recipe is a definite keeper and very versatile - I look forward to trying it with spinach and shrimp!

Chicken and Red Wine Sauce
A very good sauce! I used one cup of red wine and 6 tsp of brown sugar and it was just a tad on the sweet side, but it was still very good. I added half an onion, sliced, and half green pepper, sliced. I also added 6-7 garlic cloves, sliced. I cooked the chicken mostly through and then added the wine and sugar just to make the sauce. Served over spaghetti pasta and was delish!!

Maple Apple Crisp
This turned out REALLY good. I used just shy of 3 lbs of apples that were already chopped, but with skins on - didn't make a difference in the end though. I doubled the crumb topping and used only 1/2 c butter total. This dish tastes really good, but there is more juices in the pan than I thought there would be. It's not all bad, since some of it softens the topping while you're eating it, but I thought it would be more of a "solid" dessert overall.
