Roasted Asparagus with Parmesan
This yielded a "this is the best asparagus I've ever eaten" from my YAY for this one! I used a cookie sheet (with raised edges) to prepare. Put a small amount of olive oil (about 1 tbls) into the pan, added little balsamic vinegar (maybe 1 tsp), stirred them together and spread over the pan, and then rolled the asparagus in it to coat. Then sprinkled with sea salt and placed in oven. While it cooked, I toasted about 3 tbls of sesame seeds and sprinkled them on the asparagus when it was done (which took about 12 mins). This added a nice flavor and texture. We dubbed it "freckled asparagus," and I've been requested to make it again soon. Thanks for this great recipe. A wonderful alternative to steaming.

Salisbury Steak with Mushrooms
This was a winner! The only changes I made were adding a splash of Worcestershire sauce to the hamburger mix and about 1/4 c red wine to the sauce. I did follow suggestion of other reviewers, removed patties from pan and sauteed the onions and mushrooms slightly before adding other sauce ingredients and returning patties to finish cooking. Served with salad, roasted asparagus, and rice. Very yummy. Will definitely be repeated.

Spicy Italian Pork Cutlets
Made this for dinner tonight and it was wonderful! I made just minor modifications for personal preference...sauteed sliced mushrooms with garlic and used bone in chops that were about an inch thick, so had to cook a bit longer. I used Italian stewed tomatoes because that's what I had, and they added great flavor, and I did add about 1 tbls butter to the sauce when chops were done as one reviewer recommended. Served sauce over rice and on chops. Moist, tender, very flavorful. Yummmm...delish!
