Italian Vegetable Soup

Everyone really enjoyed this. As suggested, I doubled the amount of water. Which made it it more soupy, as written it is more like a chowder.

Very very good! I did as suggested and reduced the broth in half and cooked for 4 hours in my slow-cooker. This recipe has been added to my monthly rotation as my children enjoyed it just as much as the adults.

Unbelievable Spinach Calzones

This recipe is a keeper! Very tasty, even the kids enjoyed them. I used fresh spinach and added 1TBL. minced garlic to the mixture. For the dough I used Jiffy Pizza Crust Mix (4-boxes). Also served them with little cups of pizza sauce for dipping as suggested.

Greek Pasta with Tomatoes and White Beans

Wonderfully simple recipe that is full of flavor! I prefer unseasoned diced tomatoes instead of the stewed type. So, I used the diced and like others suggested, I also sauteed some minced garlic (2 cloves) and added 1/2 c. chopped onion in a bit of olive oil with 2-tsp. basil & 1/2-tsp. oregano. This recipe made quite a bit of sauce, so I used the whole 16oz. box of penne and it feed my family of 4 with enough left-over for my DH to take for lunch the next day. I will definitely make this again.

Mediterranean Pasta

Wonderful, wonderful, wonderful... and very simple to make! I fix this at least once a month and when I cook it for guests they ask for the recipe. I always use kalamata olives and usually add more artichokes because I love them. This tastes great the next day.... I also hide it in the fridge so I can have it all to myself. ;o)

Basic Ham and Bean Soup

A great recipe for left-over holiday ham! I didn't use the hock. I subbed canned small white beans (4) instead of dry beans. I also added 1 jar of petite diced tomatoes and added a bit more celery. This soup was devoured by my family.

Artichoke Spinach Dip

I've used many different recipes for this in the past and this is the only one I use now. Cooking it on the stove top makes it much quicker to prepare. I also double the spinach & artichokes as suggested and I add a bit of minced garlic too. Served with cut celery and sliced sourdough = YUMMY!

Penne with Spring Vegetables

Freshly grated Parmesan cheese and a good quality E.V.O.O. make this a delicious pasta dish! This one has been added to my rotation of regular recipes ... even the kids loved it.
