Carrot Cake III

I only changed one thing on this recipe. I cut back the oil to 1/2 a cup and used 3/4 cup applesauce. I made this for my husbands birthday with cream cheese icing. It was perfect.....I think the best carrot cake I've made yet, and he love it! This recipe is definately a keeper for me!

Baked French Toast

I thought this might be a good recipe for Christmas morning, but decided to try it beforehand and make sure it was good. I halfed the recipe and made a few changes that the other viewers had mentioned. I omitted the milk and didn't lay them flat, but angled them. I tried to flip them half way through, but it was difficult because they were so soggy. They cooked fine, but looked unappealing. My husband said they were too sweet. I wasn't that impressed with this recipe and probably won't make them again.

Red Velvet Cake

This is the first time I've made a red velvet cake. I do a lot of baking and figured this seemed fairly easy. I found the batter to be very thick and hard to spread into the pans. The cakes hardly rose. So, I made it a 2nd time thinking that I'd done something wrong. Same results. Because the reviews are so great for this recipe, I'll try it one more time.

Parmesan Chicken I

I followed this recipe almost exactly. I put in frozen chicken breasts and didn't have fresh parmesan cheese, so used the shaker style parmesan. I cooked this on high and it was done in 2.5 hours! If I'd cooked it any longer, the chicken would have dried out. My husband really enjoyed it. I have added this to my recipe box -- it was super easy! Thanks!

Spiced Applesauce Bread

I followed this recipe only making a few changes. I added more spices (cinnamon, nutmeg and allspice) and I added 1 cup of diced apple. This loaf is wonderful and moist. I have added this recipe to my collection and will definately be making it again.

Fudgy Chocolate Chip Muffins

I made these making some of the changes that other people had mentioned. I put in 1/2 cup of butter and about 1/4 cup of milk. These came out great. They did not sink in the middle, they were flat on top. I found them to be more like a chocolate cupcake than a brownie. Not sure what I did wrong. They were very moist and I will definately make them again.

Peachy Moist Muffins

I did what some of the other viewers mentioned and added 1/2 tsp baking soda and a little milk as the batter was pretty thick. I used canned peaches and omitted the nuts. These turned out great! They are nice and moist and my family loves them. I will definately be making these again! Thanks

Simple White Cake

I have made this recipe several times. I made cupcakes and I doubled the recipe to do a 9x13 birthday cake. I ended up cutting the birthday cake in half and putting a custard filling in between the layers. It was a hit. Every time I make this recipe, it gets rave reviews. As a few other people have mentioned, I needed to add more milk to the recipe, but overall a hit!
