Naturally Low Carb for Life

I love pizza. Unfortunately it's not on the diet, well the crust isn't anyway. This is my low carb answer to pizza. It's super fast and because I use nitrate free pepperoni and turkey sausage more healthy and lean than regular pizza. My husband and I split this by itself for dinner, but it could probably do for three if served with a side salad or dessert.

1 chopped Vidalia onion
1 tbs olive oil
1.5 lbs. Turkey Italian Sausage (Hot or sweet as you like. I use hot)
1/2 cup halved pepperoni slices
1 cup shredded mozzarella cheese
1/2 cup of tomato sauce or left over spaghetti sauce
1 tsp pizza seasonings spice mix
  1. Cook onion in oil until it begins to brown around the edges
  2. Add pizza seasoning
  3. Squeeze the sausage meat out of it's casings. Discard casings.
  4. Add sausage meat to onion, break up and cook through as you would any ground meat (no pink)
  5. Add pepperoni and tomato sauce stir until heated
  6. Sprinkle cheese over top of mixture
  7. Remove pan from heat. Cover and allow cheese to melt for a minute.
  8. Scoop out of pan and into bowls to serve

I once made a birthday cake for someone when I could not smell things properly. I didn't realize my vegetable oil had gone rancid. Yuck.
