OMG, yum! This was delish, all three of my kids, who can't agree on anything, loved it! I modified it only a bit, cutting the cajun seasoning to 1 1/4 tea, as we're a bunch of wussys, and it had just enough bite to it. Bear in mind that if you have to cook your meats, it does increase the time to about 2 hours, by the time you're done cooking and chopping. I found that this made enough for 3 whole meals for us, a family of 5 (with 3 boys, 2 of whom are teens). The only thing I'll change next time is to add more liquid. There wasn't quite enough to fully cook all of the rice, so next time I'll add another can of crushed tomatoes.
