The Best Meatballs

I did a half batch for the meatballs. I'm not a huge fan of cheese in my meatballs so I did not add any and used about 1 1/4 cup of fresh bread crumbs. I usually bake mine, but tried the frying. It was a little too oily for me. And because I didn't use the cheese, I only put in about a half cup of water. I also used about 2-3 tsps of Herbs de Provence instead of parsley. They came out light and flavorful. Despite them feeling really wet when they were put together, they held their shape well enough. Next time I will try baking them instead and adding a little more bread crumbs. Otherwise my family really liked them. I was asked to keep the recipe. :)

The Best Rolled Sugar Cookies

This was absolutely the BEST tasting sugar cookie I have ever had. However, I couldn't get it to roll out!. After the time in the fridge, it was so hard, I had to chop at it with my butcher knife. It was still the best tasting cookie I've ever had, if a little oddly shaped. :)

Broccoli Chicken Stir-Fry

3.5 - 4 stars for this recipe - 5 for my version. Great basic recipe for stir-fry, however less liquid is in a stir-fry so no matter what changes you make to this you must decrease the liquid. I made some family preference changes. I added garlic, mushrooms and onions. I used peanut oil instead of canola (sesame works very well too). I used 2 1/2 cups chicken broth instead of 3 1/4 cups water and omitted the granules. I grated the carrots instead of julienned them. I used 2 Tbl regular soy sauce and added red pepper flakes to taste. We had guests over that evening and there wasn't a speck of stir-fry left! Everyone devoured it and raved about it!

Bean Salad

I didn't care for this as a "bean salad", but this made an excellent salsa for tortilla chips! I'd make this again.

This was a decent recipe. Nice flavor and texture. I'm not a big whole garbanzo bean fan (i prefer hummus style), but overall a good bean salad.

White Bean Tuna Salad

Too much tuna, the beans were odd and Way way WAY too much vinegar! I might make this again with a whole lotta changes, but I still can't get the taste out of my mouth. I did not like this recipe at all. Sorry...

Carrot Cake

Delicious! Very moist and tasty. I followed one of the reviewers suggestions and used a slightly larger can of pineapple and it was excellent! My picky 3 yr old loved 'em except for the nuts, he'd pick those out. :) Thanks for the recipe!

Pizza Dough III

Great tasting dough, very flavorful, however, I don't know if I missed it in the recipe, but this dough absolutely cannot be made into a thick crust pizza or it will still be raw. I ended up cooking the sucker for an hour and it was still raw in some places! I tried it again as a thinner crust and it was excellent! But do not make a thicker crust pizza with this (or a stuffed crust) as it will still be raw.

Refreshing Cucumber Salad

OMG!! This is the exact same salad my Grandma used to make. Thank you! I could never get the amounts right and this was perfect! However, I did make some changes due to personal taste as well as what was on hand. I made a Quadruple batch so I used 4 large cukes, 2 md white onions, 5 Roma tomatoes, 1 cup mayo, 4 Tbl white vinegar, 1 tsp salt, 2 tsp pepper and 1 tsp minced garlic. I highly suggest that you whisk the dressing stuff first...then pour over the veggies and carefully stir. Otherwise it's not going to mix very well, and it absolutely must sit for AT LEAST 1-2 hours before eating, plus this is even better the next day, as the flavors then have enough time to truly blend and set, especially after the water is pulled from the tomatoes (which is what some people think is "runny", but that is actually your "dressing" so don't drain it! It has all your flavors in it!). I must say though, you absolutely have to check/taste the cukes for wax if you buy from a grocery store. If you can't wash all the wax off, then you must peel them completely, or your salad will be extremely bitter.

Streusel-Topped Muffins

I only used the recipe for the streusel topping from this recipe and put it on blueberry muffins. It was very good! It was a tad too sweet for my family. Next time I will add less sugar.

Cobb Salad

This salad can be made anyway you want! I was feeding 5 people, they all had different dressings (blue cheese, ranch, Catalina, Thousand Island...) it went with everything. One person had steak on theirs, another had chicken... All in all an excellent basic salad! Thank you!

Holly's Hummus

As I am not an Olive Hummus fan I left out the olives and added a jalapeño instead. I also didn't have fresh basil so a pinch of dried was used. I thought it was tasty, and a decent hummus. The texture seemed off to me... not as smooth (like the store brand) that I was hoping for. My father however LOVED it. I made a batch and it was gone in 20 minutes! I will definitely make this again, but will play with it to see if I can get a smoother more pureed texture.

Stir-Fried Rice

Awesome! I love this recipe. Stir-fried rice is a huge hit in my family. I add whatever veggies I want and toss it all together and it's perfect! Thank you! On a separate note...I did add a dash of onion and garlic powder (just to give it that extra oomph).

Chicken Marsala II

WAY TOO MUCH MARSALA! Oh my goodness, my family couldn't even get through 3 bites of this. And we love chicken marsala! I would would definitely cut the marsala down. Everything else was fine, but I honestly couldn't even taste the chicken or mushrooms (or the pasta) with the in-your-face marsala.

Feta Cheese Foldovers
