Mushroom Risotto

This is a delicious dish, whether it's authentic or not. I've made this recipe several times - a couple of times exactly as the recipe says and several times with variations, and it's always a hit with my family and company. That's why I like this particular recipe so much, it's easy to play around with if you don't have all the ingredients the recipe calls for - I've made it without the mushrooms, several times by using chicken broth instead of vegetable broth, one time with evaporated milk (yes, don't gasp foodies!), with 2% milk and no cream, many times using only a quarter cup of the Parmesan, and sometimes with no Parmesan cheese at all...and all varieties were very good and received compliments. My husband did say he preferred this dish with less than half of the Parmesan or none at all. I had to agree - using the full cup made it a bit overpowering to our taste. I do think works best to prepare it in a heavy-bottomed, good quality skillet, as I noticed that when I used a lightweight skillet it took quite a bit longer for the risotto to cook.

Grandmother's Buttermilk Cornbread

A good, classic sweet cornbread recipe...(the people commenting on it not being authentic cornbread since it has sugar are so annoying...who said the southern variety is the real kind - recipes differ according to the region of the country) Ugh! But this is a wonderful dish - my family loved it.

Tomato Cucumber Salad with Mint

This recipe seemed too simple to be very good, but I wanted to try an alternative to the traditional cucumber salad I usually make with cider vinegar, oil, and sugar. But simplicity can be wonderful, as proven with this was delicious, just fresh and light. I've made it twice so far and it goes quickly. The second time I made it with Splenda for a low-calorie side and it was equally good. I'll be making this quite a lot through the summer as the cucumbers ripen.

Sweet Barbeque Beans

This is a good dish for summer BBQs...We served it with grilled hamburgers and hot dogs and there wasn't a bit left over. Like one of the other reviewers mentioned, I also wasn't sure what honey garlic sauce was but saw while shopping that Kraft has a Honey Garlic BBQ sauce, so I bought that to use. I'm not sure if the Kraft BBQ sauce is the same type of honey garlic sauce that recipe called for but the beans were still absolutely perfect.

Baked Fish Creole

This went over well with my family for different son enjoyed the rice, my husband liked the fish, I liked both the fish and the rice! I used swai, and I also used homemade chili sauce. I added tons of creole seasonings - Slap Yo Mama, Emerils, Old Bay, and extra Frank's hot sauce to make it nice and spicy. I think this would make a great rice sidedish too by leaving out the fish. We liked it well enough that I'll save the recipe and make it again.

Bourbon Slush

This drink is beyond good, just plain irresistable. Like many of the other reviewers, I intend to always have some ready in the freezer. A note about the lemon-lime soda....the first time I made this bourbon slush, I didn't realize I was suppose to pour the soda over the slush - I mixed the soda (7-Up) in with all the other ingredients and put it in the freezer - it was still fantastic!
