Creamy Chicken and Wild Rice Soup

Sometimes following the reviews is good, sometimes not. I'm just finishing up the soup and I took others' advice and added shredded carrots (what I had), mushrooms (thrown in too so they didn't go to waste), and about 1/4 c. of onion. I also reduced the amount of flour (as some recommended) since I used the uncle ben's rice (6 oz. box), and I was just looking at the soup trying to figure out why it wasn't thick like I was expecting. It had to be because of the reduced amount of flour (only used about 1/4 c. as a reviewer suggested), and because I like my soups thick, it's not enough. I wish I would've used the whole 3/4 c., but I'll know better next time. The flavor is delicious, and there will definitely be a next time. If I would've followed the directions, it would've been 5 stars, so I gave it that anyway.

Sweet Restaurant Slaw

As Rachel Ray would say, YUM-O. I made a few additions after reading the reviews. I made a smaller amount of slaw and used 1 head of green cabbage instead of the bagged. I added cut up broccoli florets, and only used 1/3 cup of mayo, since I saw reviews that said it was a bit soggy, and I don't like my coleslaw very wet. I used mayo instead of miracle whip (because I saw that the MW added sweetness), 1/4 c. of sugar, rice wine vinegar instead of white, and about a teaspoon of deli mustard for some uumph. Delish, and the perfect amount of sweetness for me. Obviously I made changes, but outside of the sweetness, the recipe itself is great. I think it just depends on how sweet/wet you like your coleslaw. Will make, again and again!

Broiled Sweet and Tangy Tilapia

good recipe. very easy with a great, light sauce. i read the reviews and used apple cider vinegar instead of the raspberry, and i didn't have any tarragon, so i just omitted it. it was still great, even with the substitutions. i noticed some people thought it was too bland, but that may be due to seasoning. i always season according to my own taste, and just salt and pepper only never gets it for me! i used old bay seasoning, pepper, and a bit of rosemary, and it was great. the sauce should be doubled, but it's definitely an easy keeper, especially for a so-so fish like tilapia!

Sloppy Joes II

I made this recipe as directed and for me, it was way too sweet. I would maybe try 1 tablespoon of sugar and add the others to taste. It was also a little bland as well, missing that extra "oomph". I added some A-1 and played with it until I gave up. It seems like it's almost there but not quite, which is why i gave it a 3. I looked at some other recipes and would probably add the vinegar & worstershire next time.

Too Much Chocolate Cake

Made this cake yesterday using the andes chocolates as suggested. It was good, but since I love chocolate, I think it would work better for me with pain chocolate chips. This cake is very moist and delicious, though, especially for those who love chocolate. I used the satiny glaze on top, but I think I'll try the ganache the next time. Great cake, very easy.

Balsamic-Glazed Salmon Fillets

YUM, YUM YUM! I've made this several times and its always good! True, it doesn't smell great when cooking, but sooo delicious and always easy to make with ingredients on hand. Also, it's a good break from some of the other recipes with brown sugar.

Filet Mignon with Rich Balsamic Glaze

Made this last night, and added brown sugar as some have suggested (2 tbsp). SO GOOD!!! My bf couldn't stop talking about it, and luckily I have 2 more steaks left, so we WILL be doing this again before Sunday. Would also be great sliced over salad, in a quesadilla, etc. I accidentally forgot the sauce on the stove after removing the steaks, but it was so nice and thick, it worked out perfectly. This one is a keeper!
