Pumpkin Bread

My husband, son, and I all loved this bread! I substituted allspice for cloves since I didn't have cloves, and subbed one cup brown sugar for the white sugar. Amazing!

Sour Cream Pockets

I agree that the dough for these is somewhat bland. However, I made my own apple pie filling, brushed these with an egg wash, and sprinkled them with cinnamon and sugar before baking. Then I made a glaze using confectioners sugar and milk and poured it over top once they were cool. My husband loved them, saying they were like apple turnovers. Next time I'm going to add a little sugar and vanilla to the dough though to make them a little more flavorful. Also, the dough becomes soft and doughy, instead of staying flaky, if these aren't eaten right away.

Chicken Florentine Casserole

My husband loved this recipe and he doesn't even like spinach. Definitely a keeper. I did reduce the spinach by only using one box of frozen, but I had less chicken too.

Hungarian Goulash I

My husband and I both thought this was on the bland side, and my husband likes his food more bland than me. I followed some reviewers tips and used beef broth instead of water, and I also added a touch of brown sugar, but the flavor just wasn't all there. It needed something more, but I don't know what...

Fruitcake

I really like the initial flavor of the cake itself, but the brandy ruined it for me. We didn't use cheap brandy. The problem was that I couldn't get the alcohol out of the cake once we added all that brandy to it over a two week period like the recipe says. I even tried baking the cake at 250 degrees for 15 minutes to bake out the alcohol. That just made the edges of the cake hard and chewy, which actually wasn't terrible, but it wasn't what the cake was supposed to be like. This cake is too expensive to mess up. Next time (if there is a next time), we'll omit the two weeks of seasoning the cake with brandy and just eat it right away. The 3 stars are for the cake itself, the two remaining stars were left off b/c of the terrible alcohol taste from adding the brandy.

Creamy PHILADELPHIA Penne Pasta with Chicken

This was a good dish and my husband liked it, however I'm not sure I'll put the green olives in again next time. They were a bit overpowering I thought. I left out the red pepper b/c I didn't have any and added fresh sliced baby portabellas. I think almost any vegetable would be good added to this dish if you're like me and like veggies in your pastas. I also left out the rosemary simply b/c I forgot to add it. Maybe that's why it seemed a little bland and the olives didn't seem like a good fit. I marinated the chicken in Italian dressing before cooking too; personal preference.

Slow Cooker Swiss Steak

This was great! It didn't taste anything like the swiss steak I'm used to, but it was still really good and worth making. My husband requested I make it again in the future. I added a green pepper and mushrooms because I had them on hand. I also only put in 1 can of diced tomatoes and then cut up two Roma tomatoes (again b/c that's what I had on hand). I didn't brown the meat ahead of time simply b/c I didn't have time and it was straight out of the freezer. I just threw everything in the slow cooker and turned it on high for 4 1/2 hours. I added 2 tbs of flour the last half hour to thicken it. The brown sugar adds just the right amount of sweetness to this dish. Very good!

Grandma's Chicken Chardon

The breading on the chicken was great. However, the mushrooms shriveled up to nothing. I made it again and left out the mushrooms b\c I didn't have any and it was still great. The 4 stars is b\c the mushrooms cooked too long. I would recommend adding extra liquid so they don't shrivel up or adding them halfway into the cooking process.

Peppered Bacon and Tomato Linguine

This was fantastic. My husband loved this and said it tasted like a meal you get in a restaurant. I added fresh asparagus and fresh mushrooms to increase the veggies. It was great! Next time maybe I'll add chicken too to make this meal a little more hearty. Great!!!

Romaine Rice Tuna Salad

This was a great light lunch. I loved the combination of rice, tuna, and romaine with balsamic vinegar and olive oil dressing. Very good. I will make again but this time maybe for 3 or 4 people. It was a little too much for two people, but then again it says it serves 4. :-)

Buzzsaw's BBQ Sauce

I'm giving this 5 stars because it's the best homemade BBQ sauce I've eaten. If you add liquid smoke it would probably be even better, but I didn't have any. One modification I did - I only added 2 T. vinegar instead of 3 and it was plenty to suite my tastes.

Roasted and Curried Butternut Squash Soup

This soup is pretty good. I'm giving it 4 stars instead of five because 1) I've never had squash soup before and don't have anything to compare it to, and 2) I didn't quite follow the recipe exactly. I've made this twice, the first time I only used half a large onion and four garlic gloves b\c two whole onions and a whole head of garlic seemed like way too much. I also added a bit of cilantro like one reviewer recommended and approx. 1/2 cup of half and half. It turned out good but I thought the curry was too strong, and also the roasted garlic didn't . . . ahem, agree with me. The second time I skipped the garlic all together and used half a tsp of curry instead of 1 whole tsp. I also added a dollop of sour cream as a garnish when I served it. I like it better the second time I think. :-)

Easy Batter Fruit Cobbler

This cobbler was okay. I followed other people's suggestions and cut back to 3 T. butter and increased the fruit to 3 C. I ended up having extra sliced peaches left over b/c 3 C. was too much. I also didn't find the texture or taste of this cobbler to be very satisfying. I added brown sugar to the top before baking, but it didn't make much difference as far as improving the taste. I won't make this again. I will find a better recipe.
