Chef John's Coq Au Vin

Sherry Braised Beef Short Ribs

This was definitely a keeper! Didn't change anything, except that I browned the ribs in the cast iron dutch oven (much easier to get them really brown) and didn't use all of the liquid. After I had poured both the sherry and beef broth into the pot, the ribs were basically submerged. Knowing that with braising the meat should only be partially covered , I scooped out about 1 cup of the broth. (To the person who said that this didn't have a lot of flavor, I am sure that is because the sauce was diluted from adding too much broth.) Other than that--I followed the recipe to the T. It was delicious and even better the next night as leftovers! Will be making this again! Thanks Chef John.

Triple Dipped Fried Chicken

It came out crispy, but bland. I think there needs to be more spices added to the coating. Still searching for that perfect fried chicken recipe!

French Onion Soup Gratinee

This was excellent—as good as any restaurant version. However, it is misleading to think onions caramelize in 35 minutes. I think it takes about an hour to get great sweet caramelized onions. There are a couple of tips that I think help: After the onions have started cooking for about 10 minutes, add the required salt but also add SUGAR to help with the caramelizing process (about 1 – 2 tsp). Continue letting the onions cook, only stirring OCCASIONALLY. If you are constantly stirring the onions, they won’t brown. I usually set my timer for every 5 minutes, stir, and then reset for another 5 minutes. When the onions start sticking to the pan, let them stick and brown, but then stir them before they burn. Once the onions were done, I followed everything per the recipe and it came out delicious! I will definitely be making this again!

Fruit Pizza I

Perhaps this would have turned out better had I made the original crust instead of using a pre-packaged sugar cookie roll. The crust was very soggy and it was too sweet. The fruit was good but I would not make this again.

Perfect Flat Iron Steak

It was delicious! I made it for our Christmas Eve dinner, as I wanted something that I would be able to throw together w/out a lot of preparation. My entire family, including the daughters who are not fans of beef, loved it. Don't know if the recipe changed, as some reviewers talked about 1/4 cup mustard--the recipe I followed only called for 1/4 tsp, which was the perfect amount. Highly recommend!

Awesome Slow Cooker Pot Roast

I followed this exactly as written and it was so bland. My family was disappointed--I usually make a great pot roast in the slow cooker, and thought I would deviate and try a new recipe. This tasted like mushroom-onion soup with meat. I won't be making this again.

Tangy Turkey and Swiss Sandwiches

This was very good. However, I wish I had read the reviews that said to cut the amount of Thyme in half. The thyme was a bit overpowering. Other than that, they were very tasty. I did add cooked bacon to the sandwich as well (to give it more of a club sandwich appeal). Delicious!

This was good and I will make it again. However, it did seem to be lacking something, even after I added all of the suggestions from previous reviewers (cayenne, lime, potato, brown sugar, basil, etc..) Easy to make, but took longer than 15 minutes to prep.
