Whole Wheat, Oatmeal, and Banana Pancakes
These were super yummy! I just changed a couple things: I added 1/4cup ground flax seed, about 2tblspoons cinnamon, and more vanilla. I also used 2 bananas, coconut oil instead of veggie oil, and I ended up adding probably another cup or so of milk and water to thin them out since they were pretty thick, but that's probably because of the other stuff I added. But turned out to be probably my favorite pancakes I've ever made. But I topped them with whipped cream and strawberries so that's hard to beat in general =)

Cranberry Orange Wheat Scones
I made quite a few changes, but they were really yummy. I thought using all whole wheat would be too heavy (although I should try it and see!) but I used 1 cup AP flour and the rest whole wheat. My wheat germ was bad so I used ground flax seed, and I subbed sour cream for most of the milk since I had a lot. I used half butter/half shortening and threw in a bit of coconut oil and also added some protein powder for good measure. I made a glaze like some suggested with OJ and powdered sugar and they were super good... without the glaze I think they would need some butter or something. I also didn't roll them out I just spooned them out like big cookies. But I LOVE cranberry orange scones and this was a nice healthier take on them!

Black Beans and Rice
Really good!... added chopped red pepper and zucchini, used about 1-2 tablespoons taco seasoning instead of the cumin, increased the rice to 1 cup (and 1 cup broth), added a can of tomatoes and a can of corn, and put in in a cassarole dish and topped with shredded monterey jack cheese. I thought it was really good with the extra veggies.
