Very Fruity Rum Punch

I use club soda instead of water, no banana, coconut rum and a splash of pineapple vodka if you are really feeling frisky ;) You can't go wrong with these flavors, even adding more or less of any of the ingredients to taste. but be careful, it doesn't taste as dangerous as it is!! Great recipe, it's my go to for pool side parties!

Mexican Rice I

Really good! I followed all of the directions as written except I used a little salsa instead of diced tomatoes (because it was already open) and after sauteing, before adding the broth (instead of water), I threw everything into my rice cooker and let it go. :) great recipe, easy to make.

Beer Sausage

I thought this was really good. I threw in a little celery to make up for the carrots I was lacking. Also, I sauteed the kielbasa chunks until slightly charred and threw in a splash of chardonnay just for the hell of it. I layered as described in the recipe and did not stir. Also, I do not like the after taste of Italian seasoning so I threw in seasoned salt rather than regular, some parsley and some basil. Yes, I know I changed it....All recipes are a great place to start and make it your own.

Benny's Famous Jalapeno Poppers

Saved the best for last. Just when I thought I was not going to find a popper recipe that sounded right....i got to the last one. And just in time for Superbowl!! Love the crunch of the corn and the mix of cream and cheddar cheese. Love them bacon wrapped and grilled rather than breaded. Worked great in the oven!! Made a test batch today, don't want to mess up the Superbowl snacks ;) Thanks for the recipe!

Thai Green Curry Chicken

This recipe is magnificent. I LOVE Thai food, especially green curry chicken! Favorite dish of all time. I love spicy as well but left out anything spicy due to the preference of the rest of the family. Jasmine rice is a must! at least basmati....something fragrant. I made my own curry paste. I also lacked the ginger root and subbed a bit of ground ginger instead. I plan to invest in a little ginger root for my next cook up of this recipe (yes, a staple in our home from now on) Ginger root lasts up to a month in the fridge. Or!!! you can mince, process, shred, and freeze. If you love Thai....this recipe is the &^%*. For lack of a more enthusiastic word ;)

Super-Delicious Zuppa Toscana

Excellent. I used some sour cream and rice milk with a little corn starch, and a can of cream of mushroom soup in the place of the heavy cream (only cause I was out) and it still turned out great. I also used half maple sausage and half beer brats, sounds crazy....but is delish! I have also made this before as written and it is delicious just the way it is!!

Caramel Apple Jam

One Bowl Chocolate Cake III

Spooky Halloween Eyeballs

We made these for Halloween. Careful melting the chocolate and do not add any liquid at all for any reason. Mistakes I made....my chocolate got too hot and I thought I would add milk to smooth it out. BIG mistake. I learned later that chocolate will seize if you add a drop of liquid. Melt it slow!! Once it is overheated you can not save it. I ended up using milk chocolate after ruining the white. We made chocolate monster eyes, dipping the PB balls partially into the chocolate leaving a peanut butter circle. Then we put a chocolate chip in the center of the peanut butter "eye" for the pupil. Was a good save for an already great recipe.

Anniversary Chicken I

Wow! This chicken was really great. My husband and both of my children (all of which can be hard to please) absolutely loved it!! I followed the directions exactly...using Kens teriyaki/honey marinade/sauce. I did not use the entire 1/2cup of marinade....but perhaps should have used a little more. Other than that...YUMMM

Sour Cream Chops

This smells amazing in the kitchen! I found that the skillet I used was not large enough to brown the chops so I browned them in batches in the skillet, transferring them over to a stock pot that I kept on a low temp. When the chops were all done, I mixed the basil, tomatoes, etc into the "left-over stuff" in the skillet where I had cooked the chops. This made a great sauce ( I also sub'd cream of mush. ) I poured this over the chops in the stock pan and followed the directions from there. MMM mmm
