Vietnamese Fresh Spring Rolls

The sauces are fabulous. I made these with saifun mung bean threads, cucumber, cilantro, green onions (white part chopped and greens laid lengthwise), and broccoli slaw from a bag! Couldn't have been easier and I am a very basic cook! Everything was available in my local supermarket.....so delicious, healthy, and no cooking! even the bean threads just required soaking for a minute in boiled water.

Vegetarian Kale Soup

This is a great easy soup! Changes: I used 1 can of white beans, two fresh tomatoes, and about a cup of mashed potatoes flakes. Omitted the oil....just sauteed the onions, garlic, and kale in the base: a combo of veggie and mushroom "better than bouillon. Tossed in some black pepper, Bells seasoning, and a little sprinkle of crushed red pepper. Wow, it smells like Thanksgiving and tastes almost as good with almost no fat!

Strange Flavor Eggplant Spread

I also usedd only 1 scant tbsp sugar and don't think I'd prefer more. My eggplant wasn't that big so I wish I'd cut back on the soy sauce- itwas a little overpowering. Also I added about twice as much red pepper flakes for a little more zing. All in all a very tasty dips. Took the advice of another reviewer and baked whole wheat pita bread triangles brushed with garlic chili oil. (warning: only takes a few minutes!)

Mulligatawny Soup II

This recipe is better than my local Indian restaurant's! I substituted ginger paste, curry powder, added a celery stalk, and used Better Than Bouillon for the broth. I sauteed the ghee, onions, and spices then added to a crock pot wiht the diced veggies, red lentils and broth then added the coconut, tamarind paste, lemon, and cilantro before serving. With some crusty bread, this makes a nice meal for a cold winter's night!

This is an amazing combination of flavors. I like to sprinkle the top with a few red pepper flakes and some toasted almond slivers. It's best chilled overnight.

Restaurant-Style Potato Salad

This is very similar to the recipe my mom has made for years. I use Cains maynaise and omit the sugar, pimentoes, carrots and parsley. It 's my favorite- all other potato salads taste so dull in comparison!

Aloo Phujia

The one star off is really my fault. I"m just not good at getting potatoes in a pan to brown! Flavor very good though. I used a can of diced tomatoes and green chilies and addded a couple of handfuls of frozen green peas towards the end. Nice with eggs and a little yougut for brunch.

Hot and Sour Chinese Eggplant

Delicious! I used chili garlic oil and added a couple of drops of sesame oil. Try to find the chinese eggplant for a much more delicate flavor.

Hummus III

I use a good splash of olive oil and a full third of a cup of tahini. The secret to making it really creamy though is to pour a thin stream of water into the food processer as its whirring. Hard to go wrong with these ingrediants! serve with sweet potato tortilla chips!

Banh-Mi Style Vietnamese Baguette

Thanks so much for this recipe! I loved it- the sandwich sauce is perfect! I didn't have rice vinegar and substituted rice wine which wasn't quite right. Still very very good! A great vegetarian lunch!

To Die For Blueberry Muffins

I doubled the recipe, used half whole wheat flour, and made the topping suggested by chef joy. The double recipe was too much batter for 12 muffins...even filled up to the brim. I had leftover that I baked in a little pyrex ramekin. They didn't sink at all even with the whole wheat addition and they certainly are delicious!

Sunflower Cookies

I made these cookies adding the 1/4 c. brown sugar and I still feel like they are kind of bland. Nonetheless, I won't feel so guilty eating them so maybe that is the tradeoff, LOL! (I'm thinking maybe add some cinamon next time, or molasses, or throw it all to heck and dump in chocolate chips! )

Mock Lobster

I cut into smallish strip, marinated for almost 24 hours, and broiled and it was a bit too salty. That said, my picky 16 year old and I enjoyed this chicken and spent quite a bit of time trying to figure out just what could make this chicken sort of remind you of lobster now and again. Will definitely try again!

Portuguese Sweet Bread I

I followed mommyfromseattles suggestions and did not use a bread machine. Even using all-purpose flour, the rolls came out great. Sweet enough to grill for breakfast but sturdy enough for sandwiches. These din't last long!
