Burnt Brown Sugar Cake Sauce

Reviewed: Aug. 31, 2010
This is really good. I adjusted the water a little so it was a bit thicker (used maybe 1/2 cup) and served it over strawberry shortcake in place of whipped cream. Very good!

Vanilla Cupcake

Reviewed: Jul. 17, 2010
I added a pt of blueberries and made it as a muffin. I was really happy with the way it turned out. I added a little under 1/4 a cup of milk and 2 tsp baking powder and used regular flour instead.

Rustic Sausage Pasta

Reviewed: Mar. 24, 2010
I did this a little different as our house is half vegetarian half meat eaters. I added more garlic because if there aren't at least 4 cloves in what I'm cooking I'm not happy. I also made the sauce as directed except I used 2 TB of olive oil to start it instead of the sausage fat and obviously didn't put the sausage back in after the onions and garlic cooked. The meat eaters prefer their sausage whole so I pan fried them and served them as a whole sausage next to the pasta. Everyone was happy with this and I will be making it again. Thanks!

Best Ever Chuck Wagon Chili

Reviewed: Jan. 27, 2010
This is great chili. I don't eat meat so I made this without obviously and instead of 3 cans of tomato sauce I did 2 cans sauce and 1 can of tomato paste because without the meat I was worried it would be too soupy. It turned out just like my mom's chili. I've been trying to get that recipe for years and this is as close as I will ever get. Great recipe thanks!

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 17, 2009
Made this for St. Pats with my 4 year old and it was SO good. We served it with mint jelly to add some green and it went very well. My only suggestion would be not to brush it before baking a little as it browns a little faster then it cooks that way, but that could also be because we made our loaf very thick.

Vegetable Soup - Irish Style

Reviewed: Mar. 15, 2009
I left out the potato flakes and added some barley instead. I also only half pureed so some of the veggies were still there. I thought it was very good though a little lacking in spice. Next time I make it I think I will use vegetable broth instead of water to correct that. I enjoyed it, as a vegetarian I would never use chicken broth so all the reviews that suggest meat ingredients are missing the vegetarian part of the recipe. I know it isn't authentic Irish food but that's because it's changed up for vegetarians.

Artichoke and Shrimp Linguine

Reviewed: Feb. 27, 2009
I made this without the shrimp (we are vegetarians) and it was very good. You wouldn't have known it was supposed to have it. A little too spicy for my 3 year old but everyone else raved!

Lime-Thyme Potato Wedges

Reviewed: May 29, 2008
My son is 7 years old and has never eaten potatoes. I made these tonight for my hubby because he was tired of rice, and my he and my 3 year old couldn't get enough of them. I am shocked that they even asked to eat them and very happy that I now have something other then rice I can serve as a side dish. I followed the recipe as it was except I replaced the romano (didn't have any) with asiago and didn't add it until the last three minutes I also changed the salt to garlic sea salt because we don't use iodized in our house. Great recipe!

Simple Sloppy Joes

Reviewed: May 28, 2008
This recipe was so easy and my kids loved it. I don't eat meat so I can only go off of the review of the family, but my son LOVES mamwich and didn't even know this wasn't it. I followed the advice of other reviewers and added the yellow mustard. I didn't have brown sugar so I went with one tb white sugar and 1 1/2 tb molasses, no one seemed to mind the change. I also used ground turkey because our family doesn't eat beef and added 2 tb bar-b-que sauce because the kids like the bbq mamwich. It was a big hit on a night I couldn't think of anything to make for dinner.
