About this Cook
Im married to a wonderful man i've been with for 20 years, and we have an 8 year old daughter. I've always loved to cook and bake and love to experiement with different recipes changing things up a little bit. My husband is the best guniea pig in the world....I dont think there is ever anything that i've made that he doesn't like. I've lost 80 lbs so i'm really into making over recipes to make them more healthy and still taste good.
My favorite things to cook
I love to bake mostly...anything chocolate :) Cookies, cakes, brownies. I also love trying new recipes for chicken, pasta, and soups. I am really into trying to keep things healthy but once in a while I need a treat too...that's where the chocolate comes in.
My favorite family cooking traditions
I come from a large family with lots of aunts and uncles where food is the center of everything. My whole family loves to cook and always in large portions. I think I learned most of my cooking from my grandma who was from Kentucky.
My cooking triumphs
I love to expierment usually they come out good and I have my husband, friends and neigbors who are my taste testers and so far it's been good reviews just because there usually isn't any leftovers.
My cooking tragedies
I can't really think of any tragedies except for the fact i'm trying to become better at grilling and I sometimes end up over cooking or burning stuff! So i'm working on that.

Chocolate Waffles I
My 9 year old daughter asked me to make chocolate waffles so i looked up a recipe on here...this was a very good recipe, we all loved it. Did make th glaze. Topped with fresh strawberries, powder sugar and a drizzle of chocolate syrup..YUM! I did put in 1/3 cup cocoa powder, and separated the egg whites beat until stiff peaks and folded in the battter at the end...you won't be sorry for doing this step...makes for a light fluffy waffle. As i was eating this i was thinking how good this would be with ice cream and hot fudge...next time :)

Asian Orange Chicken
I absolutely loved this. However, my husband and daughter thought it was too sweet so maybe next time I will cut the brown sugar in half. I like it sweet, but as to compromise :( They also thought it was too orangy?? Well I told them IT IS orange chicken! All the while they were saying it was too sweet and too orangy they kept eating it and there were no leftovers!!!I also did not have an issue with the chicken not staying crispy. I mixed bread crumbs in with the flour, dredged in flour/breadcrumb mixture, then egg, then flour/breadcrumb mixture again. I used more oil to fry chicken in as to get a good crispy crust. I had to cook the chicken in 3 batches, keeping it warm in the oven in between. I poured the sauce over the finished chicken before serving. To me it was great.

Good Old Fashioned Pancakes
My family loved these. Made my daughter chocolate chip, myself blueberry, and my husband plain. I added an extra 1/4 cup milk to the batter because it was really thick. They still came out like super thick fluffy pancakes. They need lots of syrup but yummy!
