Juicy Roasted Chicken

Easy Decadent Truffles

I followed the advice from some of the reviewers to reduce the confectioner sugar to 2 cups + 2 cups of chocolate chips and dipped them with 72% dark chocolate and got great results, good recipe albeit it is time consuming with all the hard work like chilling before rolling, melting chocolate, dipping, re-chilling and then drizzling with another coat of chocolate. to make it as home made Christmas gifts for loved ones. Got raves from everyone!

Awesome and Easy Creamy Corn Casserole

This is really an easy and versatile recipe. I followed the recipe exactly and used the canned kennel corn as well as cream corn. They stayed crunchy and it always turned out yummy... regardless of serving hot or cold! The best thing is, it can last for more than a week in the fridge!

Blueberry Buckle

I am only giving this recipe a 3-star coz my cake texture turned out dry and rather hard, despite sticking to its original 2-cup of all purpose flour, milk and exact shortening ratio like what the original recipe had called for. The batter was so thick that the air bubbles in-between the berries cannot be deflated and I regretted against following the rest of reviewer to lower the flour ratio to 1 1/2 cup instead. The 3-star is rated for its beautiful presentation and delicious strussel topping. However, I will not do it again :(

Chicken Fried Chicken

I followed the advice of some reviewers to add additional 1 tsp of garlic powder, 1 tsp of seasoning for fear of the bland taste. However, to our personal preference, both me and hubby found that chicken turned out to be rather bland in fact, albeit all the rave reviews it has received so far... But the saltine cracker + potato flake coating does produce an exceptionally crispy chicken, I must admit. Would not do it again:(

Creamy Caramel Flan

This flan was so creamy and delicious! I only used 150 gr of cream cheese and sieved the batter into the 10' baking pan and baked it on water bath instead of the method in the instruction. My flan was so smooth and even tastier after sitting on the fridge for days:)

Classic Tiramisu

Upon reading some of the reviews, I have decided to buy the Savoiardi style hard ladyfingers and dipped them quickly into the espresso mixture instead of brushing the espresso mixture onto the ladyfinger's for a more intense taste. As for Mascarpone cheese, I too, followed the rest of reviewers of substituting it with one 8 oz package of cream cheese, 1/4 cup sour cream and 2 tbsp of heavy cream, whipped together. I then refrigerated the mascarpone/egg mixture while I was beating the whipping cream. . And lastly, I poured the mixture onto a cheese cake pan and proceeded to chill it overnight. The result? Rave compliments from colleagues and friends all over! This is certainly a keeper recipe!!! Thanks Carol:)

Chef John's Macaroni and Cheese

I made this according to Chef John's recipe, except I reduced the mac ratio to 12 oz. (like most reviewers) to make my mac & cheese... a more cheesy version! Boy, it was so delicious and it even tasted better the next day when reheated in oven. Thanks so much Chef for this simple and wonderfully tasty recipe which is surely a keeper!

Cornbread Muffins I

I, too, made the following slight adjustments based on most helpful reviews: - 1. Soaked cornmeal in heavy cream for 15 minutes 2. Used canned corn kennel instead of frozen ones. Result?? Irresistibly tasty and moist muffin treats for me with co-workers !

Simple 'N' Delicious Chocolate Cake

I, too, baked these into 12 beautiful cupcakes for 23 minutes and frosted them with "Vanilla - Chocolate Powdered Sugar Frosting", also from this site! The result?? Beautiful, cute, little cupcakes which everyone enjoyed to have more! The recipe is really simple and fuss-free without any sort of "modification" needed, except using hot coffee instead of cold like others; just don't be unduly alarmed by its extremely thin batter but they would texture turn our nice eventually.

Vanilla - Chocolate Powdered Sugar Frosting

I have just finished making this wonderful frosting... only added topped cocoa powder to 3 tbsp and used 1/4 cup of butter and 1/4 cup of cream cheese per others reviews for a more intense, less butter flavour! The taste is to-die-for and had to agree with others that this recipe DOES NOT YIELD 3 CUPS BUT SOME 1.5 - 2 CUPS. I managed to pipe out beautifully on "Too Much Chocolate Cake" as a birthday cake for boss' daughter. Will post picture soon...

Chocolate Cavity Maker Cake

I made this as wonderful cupcakes and they are just gorgeous... in terms of presentation and taste! I piped out some slightly-cooled melted white chocolate onto these littles cupcakes and got these outstandingly presentable cupakes in the end. I only needed to bake for 25 minutes and got some 15 cupcakes. Received raves from friends and colleagues:))

Best Ever Muffins

5-star for this super-easy recipe, 5-star for its taste and 5-star for the easy-to-understand recipe instruction! I followed recipe to T. but added 1 cup of chopped fresh strawberries into batter and I got 14 beautiful "Strawberry Muffins" last night (photo will be uploaded later), all in 25 minutes as stated in recipe. Cleaning was wonderfully easy as there wasn't much bowls and utensils to wash and I will try to make "Chocolate Chips Muffin" with this recipe tomorrow. I have also received raves from co-workers as well! Thanks so much, Lori for sharing this wonderful yet versatile recipe!!

Chantal's New York Cheesecake

This is awesome! Upon others' reviews, I just added zest of 1 grated lemon and 1 tbsp of lemon juice to suit personal taste and baked at 300 degrees for 1 hour WITHOUT water bath as oven was too cram to accommodate another bigger pot for water bath. I let it sit in the oven for only 1 hour and took it out for complete cooling. Mine came out perfect without any cracks and its best topped with “Supreme Strawberry Topping”, also from this site! Thanks a million, Taliesen for this easy recipe.

Pumpkin Cake III

This is delicous! I the following adjusted spices per top reviewers' comments: - a. 2 1/2 tsp of cinnamon b. 1/2 tsp of nutmeg c. 1/2 tsp of ground ginger d. 1tsp of pumpkin spice e. 1/2 c of applesauce and 3/4 c of oil. I baked mine in a sheet pan for 35 minutes and did not frost with any topping to judge the exact original taste of cake. Also, I want to safe some extra calories from the frosting but the cake really tasted superb without any frosting! It is very soft, most and smelled good.

Supreme Strawberry Topping

10 stars! Only if I could give.... It was so super easy to prepare this luxuriously looking yet delicious topping sauce! I only added 1 tbsp of cornflour to thicken the sauce a bit with few drops of red colouring for a more professional and appealing look. Beth's Spicy Oatmeal Raisin Cookies

2,460 people can't be wrong! I tried this recipe last night with slight adjustments per others reviews: - 1. Increased cinnamon to 2 tsp. 2. Added 1/2 tsp of nutmeg. 3. Added 1/2 tsp of ground ginger. 4. Added 1/2 cup of chopped walnuts. 5. Decreased shortening to 1/4 cup. I chilled dough in fridge for 2 hours, scooped them with in between 2 melon ballers instead of the bigger ice cream scoop for more uniform, smaller and cuter cookies and baked mine for exactly 10 minutes. These little wonders came out as highly aromatic... perfectly chewy and best of all... very flavourful cute cookies! They stand tall and don’t fall flat at all upon baking and I shall post my photo later… KUDOS! A VERY BIG THANK YOU FOR RECIPE SUBMITTER AND THOSE TOP REVIEWERS!!!

Bread Pudding II

I cut 8 slices of white bread into small bite size. Other than hiding raisins in between bread pieces instead of sprinkling on top, I followed recipe to T. Also, I sprinkled some brown sugar on top of bread before baking. I got a beautifully puffed up pudding in the oven while baking and it tasted superb! I may try adding some apple slice or some thinly sliced bananas like others on my next adventure and the possibilities are endless!!

Easy OREO Truffles

I had no problem at all of rolling the crushed Oreo mixture upon refrigerating them for 1 hr but found the process of coating with melted chocolate to be too much a hassle (even using 2 forks as advised by others). The chilled Oreo mixture tasted extremely nice which contradicts to chocolate coating as I can't find good chocolate at our local store last night. I had to give away the 2 boxes of finished truffles to workers this morning as we really didn't enjoy eating any of it. Guess I won't be making it anymore… judging from the hassle of making, rolling and coating, coupled with washing with the extremely-difficult-to-get-off hardened chocolate over my bowls and forks, etc as well as time and effort spent.
