Brown Family's Favorite Pumpkin Pie

Delicious. I used a deep dish frozen crust (it was very full!) and covered the outside crust with foil while cooking, which seemed to keep the edges from burning. I increased the spices (ginger, nutmeg and cinnamon) as others suggested for a slightly spicier pie. I really loved this pie.

Jamie's Cranberry Spinach Salad

Delicious. Got rave reviews and requests for recipe. I dry toasted the almonds and sesame seeds (did not use butter). I did not use poppy seeds. Since I used Craisins I cut the sugar to 1/3rd of the recipe amount and dressing was perfect. Be careful not to overdress.

Wrapped Salmon

Very yummy and very easy, if you aren't worried about getting the phyllo dough perfect. Husband kept saying, Wow!, and I'm impressed! As another reviewer suggested, I added soy sauce, lemon juice and some brown sugar for the sauce. Baked for 25 minutes instead of 20 in order to get the gold color I wanted on the phyllo, but my oven may be a little off. First time I've used phyllo dough!

Yummy Sweet Potato Casserole

I used 5 large sweet potatoes but did not increase the amount of streusel. As advised by others, I used evap. milk instead of reg. milk, halved the white sugar, doubled the vanilla, and added 1/4 tsp ground cloves and 1/4 tsp nutmeg to the sweet potatoes. I then added 1/2 tsp cinnamon to the streusel mixture. I prepared this hours before serving and then baked just before eating. Yum!

Spanish Flan

YUM! Easy recipe (now that I know how to do the sugar sauce). I used 4 eggs and 4 oz. of cream cheese and it came out delicious. The texture was good too. Next time I will try it with only 3 eggs but still use the cream cheese. I baked it in a water bath (as other reviewers suggested) for 1 hour and 8 minutes. The four of us each had 2 pieces and cleaned the pie plate. Will definitely make again.

Best Bean Salad

Simple Roasted Butternut Squash

This is so simple and delicious. Just as good, if not better, the next day ! The second time I made this, I added a small amount of agave syrup. Like maybe a 1/4 to a 1/2 teaspoon. It was even more yummy!!! I took advice from others and microwaved squash first (poking holes with fork beforehand) to soften it before cutting it up.

Marbled Pumpkin Cheesecake

I didn't love it and judging by the fact that leftovers weren't finished over the next couple days, neither did others in the household. I've had better pumpkin cheesecakes (made by someone else). I think i like the non marbled versions better because they seem creamier. Will keep searching for that ultimate recipe I tried at a long ago party...

Lemon-Cream Cheese Cupcakes

Both cake and icing are very yummy! For some reason my cupcakes didn't rise appropriately (could have do with being at higher altitude and making the wrong adjustments to recipe). However, the taste was great anyway. True, you make about double the frosting you need. I threw my extra out and then regretted it later when I had fresh strawberries that were in need of a dip... Next time I'll save the extra frosting!

Chocolate Cavity Maker Cake

This is my new favorite cake. Absolutely scrumptious, moist and altogether awesome. I used Frangelica instead of coffee liqueur (but couldn't specifically taste it however). One problem I had, and it was user error I'm sure, but a 1/3 of the top of my bundt cake stuck to the pan. People didn't care, though, cuz the ugly cake tasted so good!!!!
