Herb Rubbed Sirloin Tip Roast

Awesome! Followed instructions to a T (doubled the rub, as I had a 5 lb roast). Turned out perfect. Think this could easily replace the prime rib roast at Christmas!!

Lemon Mushroom Herb Chicken

Delicious! So tender and flavorful. Got a rave review from the hubby. Will definitely make this again. I did not have any parsley, but can't imagine that would have made it all that much better. I also added lemon pepper to the sauce and dredged the chicken in egg before the flour mix, as suggested by others. YUMMY!

Chicken In Sour Cream

Excellent! I basically followed the directions but used cream of chicken and roasted garlic soup and added broccoli florets before baking. Next time I will use fat free cream of chicken soup and sour cream. I think it will also be just as good and a bit healthier with boneless/skinless chicken breasts.

My Crab Cakes

Awesome crab cakes! I used fresh crab and increased the seasonings a bit, but basically followed the recipe as it's written. Got rave reviews from everyone who ate them.

Pasta Primavera with Italian Turkey Sausage

This was pretty good, however it was a bit bland. Next time I make it I will add more sausage and cut back on the noodles. I'll probably try using canned tomatoes as well.

Slow Cooker Pernil Pork

This was awesome! I did it pretty much as directed, except that I used a little more garlic, a little less black pepper, dried oregano instead of fresh, and cooked it on high for 4 hours. PERFECT! AMAZING! Served it over white rice with sauteed green beans on the side. YUMMY!

Slow Cooker Beef Stew I

This was very good. I browned the meat before adding it to the crock pot. I doubled the beef broth and added some red wine to enhance the flavor. I will probably add the potatoes half way through cooking so that they don't mush next time. This was a very tasty basic stew.

Awesome Slow Cooker Pot Roast

This was awesome! Using the advice of others, I did change a few things. First I dusted the roast with flour, granulated garlic, salt and pepper and browned it on all sides. Then I added beef broth to the sauce instead of water, and I added some red wine, Worcestershire and smashed garlic. About two hours before serving I added baby carrots and sliced baby bella mushrooms. And finally, an hour before serving I added some white potatoes. DELICIOUS! I will definitely make this a cold-weather staple!

Szechwan Shrimp

This was pretty good, but I don't think it deserves the 5 star rating it's been getting. The ketchup flavor was a little overwhelming. If I make this again I will halve the ketchup and increase the crushed red pepper (there was very little heat for a Szechwan dish). It was a good elementary dish.

Fish Tacos

Butternut Squash Soup

I actually want to give this 4.5 stars, but that's not an option. Loved it! Bake the squash first and then peel it. Also, try using low-fat cream cheese to make it healthier. One package is all that is needed. Up the cayenne if you like some heat. You really can't go wrong with it.

Baked Ziti III

This is very good. I used hot turkey sausage instead of ground beef and grated cheese instead of sliced. Next time I will mix all of the ingredients together (except for the basil and parm cheese) for a better, more even consistency. But very good as is.

Stuffed Green Peppers I

I gave 4 stars based on the potential of this recipe. I didn't care for it this time, but next time I will change a few things. I will double the amount of rice, omit the tomato soup all together and add more spices - these were a little bland. Next time they'll be perfect!

Cream of Broccoli Soup I

This is a wonderful cream of broccoli soup! To make it lower in fat I used 1 ½ cups of 1% milk and eliminated the butter. To avoid lumps be sure to blend the flour with a bit of the broccoli water before adding it to the onions and celery. I also like a heartier soup so I doubled the amount of broccoli and celery. Very good and low in fat!

This is FABULOUS! Wow, the flavor is incredible! I used everything except for the sesame seeds (forgot them) and I increased the crushed red pepper to a tablespoon because we like it HOT! I served wrapped with rice in lettuce leaves as suggested…A+++

Baked Salmon II

This is one of the best salmon dishes I’ve ever had! Being a garlic lover I doubled the garlic – yummy! I also cut back the olive oil to 4 tbs. and increased the lemon to 2 tbs. – as others recommended. Instead of baking in foil I broiled uncovered, which was fine, except that my filets were very thick and took about 20 minutes to cook – I almost burned them! But I didn’t and the fish was wonderful paired with brown rice and steamed broccoli. A+

Cousin Cosmo's Greek Chicken

This is fabulous! I used cracked peppercorn feta to add some flavor and I used fat free chicken broth instead of the bullion and water. Note – if you stuff and ROLL the breasts instead of folding in half the cooking time will be MUCH longer. Next time I will double the spinach – it was kind of skimpy. The flavor was incredible and made for a very healthy meal served over brown rice.

Simple Spinach Lasagna
