Acapulco Chicken

Quick and Easy Alfredo Sauce

I gave this 5 stars because it was easy to prepare and my husband, and son both devoured it and said it was yummy. I subbed 1 tsp minced garlic in place of garlic powder/salt, added a dash of sea salt, and used about 4 oz fresh parm, and 1 1/3 c of 2% milk.

Garden Veggie Pizza Squares

All of my guests raved about this! This is a keeper. One tip is to heat the cream cheese/powder mix for a bit before you spread it and that makes it much EASIER to spread! :) worked for me. I followed the recipe all the way, but added a few sticks of chopped celery and shredded cheddar and it tasted great!

Ice Cream Cone Treats

My frosting would not stay on, but otherwise this was a cute idea, and easy to prepare. I tried it both ways and the waffle cones on top of the cupcakes (during baking) worked much better. I filled each cupcake liner half way and sat the waffle cone on top. Left them in a container over night and before the guests arrived I baked them for about 5 minutes and the sogginess went away! I will try it again but with a different type of frosting.

Annie's Fruit Salsa and Cinnamon Chips

This was delish!! I omitted the sugar and brown sugar, used the fruits listed in the recipe, and apricot preserves. I sprayed several tortillas with butter spray, sprinkled with cinnamon sugar, cut them into wedges then baked at 350 for 9 minutes and they were perfect. All the guests went back for seconds!

Oatmeal and Wheat Flour Blueberry Pancakes

for being healthier than regular buttermilk pancakes, I gave them 5 stars. My two year old ate them WITHOUT syrup, and so did I. I also halved the recipe, (using one whole egg and one egg without yolk) but kept the brown sugar at 2 Tbs, and used strawberries because I am not crazy about blueberries. Threw in a dash of vanilla, too~Definitely a keeper! :)

Over the Top Nachos

I added taco seasoning to the beef. I mixed the refried beans with salsa and that helped with spreading. The nachos were tasty, but I did not bake the meat because the chips manage to get soggy. I baked the chips for about 10 min on 350 degrees. before I added the toppings and placed them in the microwave

Quesadillas II

I used a rotisserrie chicken, chopped it into pieces, and reheated it along with diced onion and chopped green bell pepper. Added a dash or garlic powder and about 7 tbs of salsa. I baked three quesadillas, two as the recipe stated and one big one, using two tortillas. My hubby said they were delicious, and I agree :)

Taco Seasoning I

I did exactly as recipe stated and actually used less of the chili powder, added flour as one person suggested and this did not impress me! The chili powder was way too strong and it ruined the recipe. I had to mix the beef with refried beans to conceal the bad taste so the beef would not go to waste.

Chicken Pot Pie IX

This came out deliciously, but we had to double the broth and added some in before it baked. I cooked the chicken in broth, not water to make it taste juicier. It was perfect, but it could have been a bit creamier---overall a good recipe!! I did use potatoes as well as peas, carrots and celery and it tasted great.
