Whole Wheat Blueberry Pancakes

Reviewed: Aug. 25, 2012
These pancakes turned out a little more dense than the light fluffy ones that I am used to but they were definitely yummy!

Modenese Pork Chops

Reviewed: Jun. 4, 2012
These were a huge hit with my family! The pork chops were moist and very flavorful! I did substitute olive oil for the butter however. I will also cut back on the salt next time because i don't care much for salt

25-Minute Tunisian Vegetable Couscous

Reviewed: Jun. 4, 2012
I doubled the spices like other reviewers had mentioned and it was quite good! I used whole wheat couscous and 5 minutes wasn't enough time to absorb the liquid so i left it covered for 10 minutes. Overall it was a good recipe and my family really enjoyed it!

Turkey and Quinoa Meatloaf

Reviewed: Jun. 1, 2012
This meatloaf was really yummy! I added the extra egg like other reviews had said to do and the meatloaf held together very nicely! The hot pepper sauce adds a nice kick to it although i may hold back next time due to others thinking it was too spicy

This was my first time using polenta and it was awesome! My picking boyfriend even loved it. I added some sundried tomatoes in the first layer and next time I plan on adding some more ingerdients such as spinach/artichokes hearts/ground beef. I will definitely be making this again

This dish was delicious!!! I added marinated artichoke hearts to it and it was awesome. It took less than 1/2 hour to cook and it was a lighter pasta dish!

Chicken Balsamico

Reviewed: Sep. 10, 2011
This recipe was just as awesome as it was easy. I followed other reviews and diced the chicken before cooking it and tossed it with penne pasta instead of orzo. I will definitely be making this again!!

Greek Penne and Chicken

Reviewed: Apr. 10, 2011
This was such an easy dish to make and it turned out awesome! I read previous review and used marinated artichoke hearts and used diced tomatoes. What i also love about the recipe is that I usually have all the ingredients on hand and don't have to run to the store for anything. Next time i am thinking about adding kalmata olives to the mix or even some sun dried tomatoes. I will definitely be making this dish again!!

Pork Chops for the Slow Cooker

Reviewed: Nov. 28, 2010
These pork chops were absolutely amazing! I only had bone-in pork chops and when i got home from work they were so tender they were falling off the bone! I served it over brown rice because the excess sauce was too good not to use. Also i followed the advice of others and cut the soy sauce to 1/4 of a cup and used 1/4 cup of maple syrup (because i didn't have any honey). Since the meat was so tender it was falling apart and i plan on using the rest for a sandwich for tomorrow's lunch. I will definitely be making this again and will consider using chicken as well!

Chicken with Quinoa and Veggies

Reviewed: Nov. 11, 2010
This is a GREAT meal to make on sundays and have for the entire week. I added red peppers and sun dried tomatoes and next time i will add broccoli as well. I may try to omit the chicken broth and use water instead to try and save unnecessary calories. The feta cheese adds enough flavor. I will definately be making this again and experimenting with different veggies!

Feta and Sun-Dried Tomato Stuffed Chicken

Reviewed: Oct. 18, 2010
ABSOLUTELY DELICIOUS! I agree with the other reviewers that this dish is perfect for entertaining! I let the chicken marinate all day and also added sauteed spinach to the feta mix. I am so glad that i double the recipe because i will have leftovers for tomorrow!

Braised Balsamic Chicken

Reviewed: Oct. 5, 2010
I followed the recipe almost exactly. The only change i made was that i only had diced tomatoes with oregano and basil instead of added the dried herbs. It came out very delicious. The chicken was juicy and i loved the addition of the onions. I will definitely be making this again!

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Oct. 2, 2010
I followed the advice of others. First i sauteed garlic and onions in olive oil and then added diced up chicken that i had seasoned with garlic powder and pepper. When the chicken had browned i added sun dried tomatoes and the artichoke hearts. Finally i added the pesto sauce (i used artichoke pesto b/c i couldn't find sun dried tomato) and the can of diced tomatoes and let it all simmer for 10 minutes. I served it with couscous and steamed green beans but i plan on serving the leftovers over egg noodles.

Garlic Red Potatoes

Reviewed: Sep. 21, 2010
This was really easy to make however i would definitely leave it in the oven for longer than 40 minutes. While the potatoes were good they are missing a little something. Next time i make them i would add a dash of Italian spices

Prosciutto-Wrapped Chicken Breasts with Herbed Goat Cheese

This is an excellent dish for entertaining! I was really easy to prepare but comes out as a fancy dish. I didn't know what to think of the dates but they add a nice twist to the goat cheese. I will definately make this again!

Asparagus with Parmesan Crust

Reviewed: Mar. 19, 2010
This was awesome. I had made it with "Balsamic Roasted Red Potatoes" so there was enough balsamic in that recipe that i didn't use any balsamic with this one. It was so simple to make and so delicious. I will definitely be making this again

Pumpkin Turkey Chili

Reviewed: Feb. 9, 2010
I took others advice and added a can of black beans and also added an extra can of diced tomatoes. However i found diced tomatoes with mild green chilies in them and it worked out really well. Also i added 2 tsp of ground cumin and corriander as well. I love the combination of those two spices, especially with the black beans. The heat was just right for me and i felt no need to add any additional pepper flakes or chili powder. This is a great healthy recipe and it even passed my parents (who usually can spot a recipe that i have made "healthier"). They both loved this one. I will definitely make this again!

Pumpkin Rice Pudding

Reviewed: Nov. 6, 2009
I used brown rice for this recipe and it seemed like the recipe called for way too much water and too much milk because the rice didn't come close to absorbing all the liquid. I drained out a lot of milk. However it still came out pretty good. I wouldn't say it was amazing but it is editable.
