Chicken Breasts in a Sour Cream and Wine Sauce

I really loved this. It was pretty easy as I already had bacon cooked from the day before. I had a three pack of some pretty thick breasts. I trimmed the fat from the edges and halved them thickness wise, so I ended up with six thinner cutlets, which worked out great. I used fresh mushrooms, added a bit more broth to the consistency that I liked, and some garlic per another review. Next time I may add diced green pepper to mimmick the "Chicken Supreme" my mother used to make. Really delicious!

Cranberry Nut Granola Bars

I was leary of the sweetened condensed milk, because I thought it might be too sweet. NOT at all. It added just enough sweetness. Swaped out a couple of the fruit/nut suggestions, but made sure I kept it to the right amounts. I also added a dash of salt. Only baked 17 minutes for another review. They baked up perfectly chewy. Thanks for a great recipe!

Clone of a Cinnabon

Yep, 4,500 people were right. Did not have a bread machine or a kitchen aid, nor did I need one. I also used regular yeast and and a mix of all-purpose and whole wheat pastry flour. They came together and rose beautfiuly. Tasted tender and delicious, not hard or yeasty as I've had with other yeast recipes.

Ranch Dressing II

Sooooo good! Love to crumble bacon in it for a more decadant dip. Also can be made with light sour cream and mayo and thinned out with skim milk for a less fattening dip or dressing. Thanks for the great combo of herbs and spices!

Heavenly Angel Food Cake

Giving four stars because the cake did not pop right out of the pan. In fact some of the bottom remained in the pan when I removed it. I think next time I will grease the pan. On another note, the flavor was very delicious and I will make again. I mixed my sugar with the flour, instead of adding it slowly to the egg whites, because I forgot and was not paying close attention to what I was doing. I also used Sun-crystals which are part granulated sugar and part stevia. I don't care how natural stevia is, I always experience an aftertaste, though not horrible and much better than the chemical taste of some of the store bought cakes. My cake also did not rise as high as I think it should have. That may be due to my blunder and the sugar substitution I made. Like I said, only four stars because it stuck to the pan. Otherwise delicious!

Dark Carrot Raisin Muffins

I've tried alot of muffin recipes and thought this one to be exceptional. I think of a muffin as a healthier version of a cupcake. So, if I want desert, I'll make cupcakes. This was slightly dense and quite moist. I subbed blueberries for the raisins, added 1/2 c nuts, and sprinkled the top with a little carmel sprinkle from pampered chef. They were over-the-top good. Kids loved them. Thanks!

Food Processor Chocolate Whipped Cream Frosting

I love the subtley sweet and more prominent cocoa flavor. Made mine with a hand mixer, just takes a few minutes. Went great with my already pretty sweet cupcakes. Keep in mind, this frosting is best chilled. Can sit at room temperature, but will soften quite a bit. Thanks!

Artichoke Bruschetta

This is super easy and very tasty. I like to toast my baguette rounds a little before I add the topping and bake, for a little extra crunch, but not necessary. I realized I wanted to double this recipe AFTER I already had a single recipe made, it was a breeze to double. Awesome!

Megan's Granola

Awesome recipe. It is great to have such a reliable and delicious base recipe to play with. I left out the maple syrup to unsweeten a little and the oat bran because I didn't have. Wonderful with mini chocolate chips. My son doesn't know I ate some with it. Shhhhh!!!! Don't tell.

My sister made this on Christmas day. I loved it. It was tasty and not too heavy. A nice change from ham or turkey of course, but would have been great anytime. Using freshly grated parmesean is a must!

Extreme Chocolate Cake

Dee-liscious!! I made this recipe from a Hershey cookbook nearly 20 yrs. ago. The only difference was the amt. of flour. The old recipe only called for 1 1/4 cups flour. Yes, the batter was even more runny and I remember thinking, whats up with the runny batter. But it bakes up perfectly. The only pointer I might give is dividing the batter into three to four pans as opposed to splitting two layers. I have more success with that method and it's less work. I do prefer three layers to four when I make this. I ususally fill and frost sides with a chocolate mouse frosting with shaved chocolate betweeen layers and a ganach on the very top only, drizzing down the sides somewhat, whith a little fresh whipped cream to decorate.

Black-Eyed Pea Gumbo

Great recipe! Healthful, easy, AND delicious. The only change I made was that I drained the beans and added an extra cup of broth. Also used white rice instead of brown. This was tame enough for the kids but husband and I enjoyed a dash of Emeril's Essence with ours for an extra kick (bam) or whatever you want to call it. Was delicious along side of the fish we had!!

Creamy Rice Pudding

Great recipe. I made it twice in two days. The first time I quadrupled the recipe for a teacher's dinner. I had half/half on hand and used that for 1/4 of the required amt. of milk and liked it slightly better than when I made the second time with just the skim milk. Guess a little fat adds to the creaminess, would make that way again.

Napa Cabbage Salad

this is a great alternative to the traditional tossed salad at mealtime. I like to decrease the oil to 1/2 cup for my own preference. Just served last night with veggie chik'n nuggets. The kids ate it right up and thanked me for the delicious meal!!

Portobello Mushroom Stroganoff

After being turned on to portabellas, I started trying them in all kinds of dishes to stand in for meat when I tasted how meaty they were. The additions of soy and worcestershire are great ideas and I would say add the sour cream to taste. I wouldn't start off with so much. Someone reccommended you could substitue beef broth for the veggie. Perfectly fine! Not everyone who enjoys vegetables is a vegetarian, so I say whichever you prefer!

Strawberry Whipped Sensation

Thought this was tasty and like the flavor combination of the fruit with chocolate crust. I do have to say, that as with some other recipes made with the sweetened condensed milk, it was a bit too sweet.

Easy Sugar Cookies

The pictures of many of these recipes are as persuasive as the list of ingredients. I'm so glad this one caught my attention. I doubled the vanilla and added 1/2 tsp. of salt to suit my taste. Other than that I was very careful not to overbake. My oven runs high, so I made an adjustment to 370 degrees baking time and 8 minutes was perfect. They were delicious!!!!!!

Monster Cookies VI

This recipe is great!!! Used all quick oats because thats what I had on had, let the vanilla run over the tsp. suggested tsp. to fit my tastes, and halved the sugar to accomadate my blood sugar. Everyone loved these. Next time I will add a pinch of sea salt, and sub raisins and dark chocolate for the semi-sweet chocolate and m&m's. Pecans or walnuts would also be delicious in these. Monstrously good!!!!
