Chicken and Corn Chili

Added 3/4 to 1 cup chicken broth, 2 cups frozen corn thawed, 1 can pinto beans and 1 can black beans drained, 2 tblsp minced garlic, 1 can tiny diced tomatoes, 1 can diced green chilies. About 45 minutes before done add corn and beans. My husband who has always said my old chili recipe was his favorite raved about this one. Best of all it is low in calories.

Iced Maple Pumpkin Cookies

These cookies have been such a hit. I've also substituted 1/2 cup brown sugar for 1/2 cup white. I've discovered an easy way to frost. Put frosting in a baggy, snip corner and squeezed little lines of frosting onto cookie, just be creative. Sharlene-Lincoln, CA

Banana Nut Muffins

After reading others suggestions I made the following changes: 1/4 cup white sugar, 1/4 cup brown sugar, 1 tsp. vanilla extract, 1/2 cup chopped walnuts, 1 3/4 cups mashed bananas (about 3 1/2 bananas) and 1/2 tsp cinnamon. They were great..low cal and quick to fix.

White Bean 'n' Ham Soup

Great soup! I doubled the recipe, used 1 lb of dried white beans soaked and cooked the night before. As others suggested I added celery and garlic to carrots and onions and used chicken broth. I also added a ham bone when I added the broth, additional chopped ham, seasonings and beans and simmered for about 1 1/2 hours. Knowing my husband and I love soup and are hearty eaters, I would say that doubling the recipe will probably give us two meals, with a little bit left over. I will definitely make this again.
