Chipotle Honey Roasted Peanuts

Made these with cashews and they are wonderful. If at all possible, use the chipotle chile powder. (Walmart has it). It really gives that smoky taste.

Italian Dressing Mix

I halved this recipe, omitting salt and using Splenda for sugar and added it to 3/4 c. sugar-free tomato juice, 1/4 c. red wine vinegar and 2 t. Splenda (or to taste). This makes a great sugar-free, fat free salad french herb salad dressing.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Carrie's Artichoke and Sun-Dried Tomato Pasta

This definately needed some added spices. Since other reviews stated it had a sour taste, I omitted the lemon juice and that seemed to eliminate the sourness. I added shrimp and some Old Bay seasoning. Some red pepper flakes would have added alittle heat. Perhaps some fresh parsley would have helped too.

Baked Pork Chops I

My 21 year old son said this was the best pork chops I've ever fixed. Made my own breadcrumbs by drying slices of white bread in the oven and putting in a small food processor. Then to make them italian, add some italian seasoning and garlic salt. I used thick chops which were super tender after cooking for 1 1/2 hours.

Crab Stuffed Flounder

I omitted pepper, salt and added Old Bay. I also used fresh parsley, omitted green pepper and used Ritz crackers in place of saltines. It was excellent! My family are not big mayonnaise fans but they did not even know it was in it. They thought it was some type of cheese sauce on top and definately could not taste it in the crabmeat.

Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini

I baked the chicken for 30 minutes in the oven. I used fat free half and half and added salt to the sauce. I didn't have fresh lime juice so used bottled concentrated so I'm sure the fresh lime juice would have been much better. But even using the bottled juice, this was an excellent recipe. Very flavorful and everyone agreed, shrimp would be great in this rather than the chicken.

Chipotle Smashed Potatoes

I used 2 large potatoes and halved everything else in the recipe. I took out the seeds in the chipotle but might leave half the seeds next time. I was afraid it would be too spicy if I left the seeds but they weren't. Maybe using all the chipotle seeds would have been too much though. Used all white cheddar cheese but I think any cheese would have been good in these potatoes. Excellent potatoes!

T Bird's Beef Jerky

I make this every year with venison.The secret is slicing the meat thin and it helps to have the roast somewhat frozen.I have a gas oven that will only reduce to 170 degrees so this is what I dry it on. I put the meat on cookie sheets sprayed with Pam and turn meat over halfway through drying.It shrinks alot and takes about 10-12 hours to dry totally but it is delicious.

Apple Dumplings I

I used flaky honey butter biscuits and rolled out as large as possible.(5").Added sugar and cinnamon to diced apples and put as much as possible (about 1/4 c./biscuit)on each biscuit. Because I put too many apples, I could not fold them up so I put another rolled out biscuit on top and sealed edges. Then baked 20 minutes, turned, baked 10 minutes then added butter,sugar sauce. Bake 10 more minutes. I reduced the water in butter sauce to about 1 T. as other reviewers suggested. These were delicious!

English Muffins

This were really good and look like store bought english muffins. If possible, let them rise(second rise) in the pans that you are going to cook them in. I let them rise on the counter and when transferring them to the pan,the muffins deflated somewhat from the rising process and lost some of the crevices. I cooked them in an electric skillet on 300 for 20 minutes and they were perfect.

Rice-so-Nice

My family has been making this recipe for years. The only difference is we add a whole bay leave to the cooking process and remove it (it will float to the top) before serving. Adds alittle flavor.

Pineapple Orange Sorbet

I used "Simply Orange" orange juice bought in the dairy section of store rather than fresh orange juice and did not add orange zest. Also used Splenda to cut calories. Combined and chilled all ingredients before putting inCuisinart ice cream maker for 20 minutes and it was ready to eat. Wonderful flavor and very refreshing.

Baked Cheese Olives

I added a tablespoon or 2 or ICE water to make the dough easier to shape around the olives. The dough should be soft and not dry (similar to pie dough) when shaping around olives. Shape each piece of dough into a flat disk, about 1 1/2" diameter, put olive in center and bring ends together at tope of olive.Roll in palms of hands to make round.

This is wonderful! I used yellow peaches and added frozen blueberries and grapes as ice cubes. Used Peach Schnapps rather than vodka and doubled recipe for 8 people. Everyone wanted recipe.Could do without added sugar.

Freezer Caramel Drizzle Pie

I put this in a 12" springform pan (sprayed with Pam) with a graham cracker crust made with 1 1/2 c. graham crackers, 1/3 c. sugar and 6 T. butter(melted). Make 10 min. @ 350 degrees and cool completely. Then layer the cream cheese mixture,caramel,coconut and pecans mixture, as recipe describes. It fits perfectly in the pan.

Tiramisu Layer Cake

Be sure to turn the layers upside down when stacking on plate and this way you can "spoon" the coffee mixture onto the layers. No need for brushing or poking holes in cake, if the layers are upside down, it seems to absorb very well. I doubled the filling but it was way too much. I also doubled the frosting and it was also too much. Made 2 coffee layers and 1 plain white as others suggested and tripled the amount of coffee/liquor mixture in order for the cake layers to be sufficiently soaked with mixture. Delicious!

Kentucky Butter Cake

I do not care for the dryness of a pound cake and this takes care of that problem. It is my husbands absolute favorite and many people have told me its the best cake they have ever eaten. It seems to improve the longer the cake sits as the butter sauce absorbs throughout the cake. Will keep at least 7 days and can easily be frozen. Thanks for a great recipe.
