Magic Peanut Butter Middles

I think this is the best cookie I've ever made. They came out perfect the first time. I thought they might be too rich, but they're fantastic!

Chocolate Chocolate Chip Cookies II

Well, the first batch out of the oven is still warm, and I just finished off my 4th cookie. I would say they're quite delicious, and I'm going to head to the fridge for some milk now. Easy to make. Nothing went wrong. They didn't flatten out like the picture I see there....but that's not a problem with me! Might try adding some nuts next time. Yummy!!!

Parmesan Baskets

These are great! I filled them with another recipe from this site - caprese salad with balsamic reduction. Yummy! I pressed them into muffin tins to try to get the shape of a little cup. My only problem was that I let them cool a little too much before doing that...they kinda wanted to stay flat, but I still made it work.

Real Hummus

Yum, yum, yum! This is great! When I checked the can of beans I bought, it was 15.5 ounces, not 19. So I kind of guessed on downscaling the other ingredients. I ended up using one large garlic clove, and the garlic taste is fairly strong...which is ok by me, but if I were to bring this somewhere I'd cut back on the garlic. Oh and I forgot the salt in the blender so I sprinkled it on afterwards, with the pepper. I'm sure I didn't use anywhere near a teaspoon. I will be making it again and again and again...can't see myself buying it at the store any more...

Veggie Quinoa

This is really good! I had all the ingredients on hand. I make something similar with brown rice and a few more veggies, but I never used spinach. Not sure why I never thought to use quinoa...or spinach! I'll make this a lot.

Playgroup Granola Bars

I like these a lot! I put in a small amount of mini choc chips instead of raisins. I forgot to mix them into the batter, so I just pressed them into the top after they were in the pan. I know I'll make these again, and maybe I'll try mixing in different things for variety. (nuts, dried fruit...) Update: Two days later, I realized just how perfect these are! Just the right texture and firmness. I'm big on tasting food fresh out of the oven. These are better when cooled! The only thing I might try changing is to reduced the sugar or try splenda.

Spinach Stuffed Chicken Breast

These went over very well! I didn't wrap them in bacon, to save calories...they don't need it anyway, they're yummy! I also used regular cheddar cheese and only one clove of garlic. I will make these again and maybe try broccoli, and fat free sour cream...and other variations! Yum!

This is fantastic....but then again, it has some of my favorite foods in it! I thought it would be a little time consuming, due to the blending, but it really wasn't bad. I enjoy kitchen time, anyway!

Harvest Rice Dish

Wow - fantastic! This is so delicious. I'll definitely be using it during the holiday season! I used less onion - 3 just seemed like too much. And I used wild rice for the whole thing instead of the 2 kinds of rice mentioned. But it's the other ingredients that make it so yummy - it all blends together well!

Sweet Apple Chicken Sausage, Endive, & Blueberry Salad with Toasted Pecans

Wow, this is really delicious! (I didn't buy the brand mentioned, but the sausage was ok on the salad - just too salty for me. Maybe I'm just not a fan of sausage.) I added dried cherries the second time around, which increased the fabulousness of the salad. :)

Kale and Quinoa Salad

Wow, yummy! I read some reviews before I made it, and decided to "massage" the kale, and put it together with warm quinoa. I didn't think I'd like raw kale, so the idea of wilting it somewhat sounded appealing. So I massaged the dressing into the kale, then poured the warm quinoa over it and mixed it up, adding the other ingredients as well. I had dried cherries so that's what I used instead of currants. It turned out amazing, and I bet the leftovers will be even better after it sits in the fridge a while.

Mediterranean Potato Salad

Wow, don't leave out the basil! I made this with what I had on hand...no basil or tomatoes. Just added tomato and basil from my parent's garden to the leftovers...and it's amazing!! What a great blend of flavors. Love the dressing!

Kale Chips with Honey

Undeniably delicious! I don't have a food dehydrator, so I baked them in the oven at 350 for about 15 minutes. The texture was ok - but not all were crispy, and they were starting to get browned on the edges. So next time I'll try them at a lower heat for a longer time, as suggested in the directions.

I loved it. I never would have thought to add cream cheese and guacamole to a BLT! By the way, I haven't even tried it "real" yet. I used imitation "veggie" bacon. I'm sure it's even better with the real thing!
