Magic Peanut Butter Middles

Darra's Famous Tuna Waldorf Salad Sandwich Filling

This is SOOOO delicious, even when you forget some of the ingredients (relish, walnuts). I was so hungry, and it looked so good as it was. I spread it on toasted english muffin halves,(also didn't put cheese or lettuce on it.)

Apple Bavarian Torte

This is delicious! I cooked it a tad bit too much, while trying to get the almonds to look toasted. Maybe that's why it fell apart a little. I will most definitely be making it again!

Blue Cheese Fried Potatoes

This was so good, it was almost too good. It was delicious and easy. Next time I'll try olive oil instead of butter, leave out the bacon, and reduce the amount of cheese....because it's so rich. It's great if you're not watching calories, or if you just decide to treat yourself!!

Real Hummus

Yum, yum, yum! This is great! When I checked the can of beans I bought, it was 15.5 ounces, not 19. So I kind of guessed on downscaling the other ingredients. I ended up using one large garlic clove, and the garlic taste is fairly strong...which is ok by me, but if I were to bring this somewhere I'd cut back on the garlic. Oh and I forgot the salt in the blender so I sprinkled it on afterwards, with the pepper. I'm sure I didn't use anywhere near a teaspoon. I will be making it again and again and again...can't see myself buying it at the store any more...

Spinach Stuffed Chicken Breast

These went over very well! I didn't wrap them in bacon, to save calories...they don't need it anyway, they're yummy! I also used regular cheddar cheese and only one clove of garlic. I will make these again and maybe try broccoli, and fat free sour cream...and other variations! Yum!

Chicken Pot Pie IX

This worked up easy and was delicious! Great comfort food. The sauce part was so easy! The only thing I changed was to use celery salt instead of celery seed, and a little garlic salt (and didn't add any plain salt). Oh, and I didn't measure the spices, just guessed! Personally I'm usually a stickler for making things from scratch, but I did buy the pre-made crusts and I really can't complain! Great supper on a winter night.

Chocolate Chocolate Chip Cookies II

Well, the first batch out of the oven is still warm, and I just finished off my 4th cookie. I would say they're quite delicious, and I'm going to head to the fridge for some milk now. Easy to make. Nothing went wrong. They didn't flatten out like the picture I see there....but that's not a problem with me! Might try adding some nuts next time. Yummy!!!

Wow, Yum, Wow. I knew this would be good. I just guessed on the proportions because I didn't need to make a giant amount. I kind of halved everything, and it all worked out. I will definitely make it again.

Baked Potato Soup II

I messed up the proportions because I wanted to make half. But I made the roux with the whole amounts...Oops. Since I had only 3 potatoes cooking (boiled them), I only added 3 cups of milk. Also left the skins on (healthier) and added onions (LOVE onions) and pepper and garlic salt. End result is quite awesome. Yep, 5 stars! I made it AGAIN: I added onion and garlic to the roux. It's a nice comfort food. I think scallions would go nicely.

Margarita Cake with Key Lime Cream Cheese Frosting

Well, we'll see how it goes over at the office tomorrow. I found it to be really sweet, really rich. The frosting is amazing, though!! I added a little green food coloring. I also put it in an 8X8 pan to make a little cake and 6 cupcakes. The cake really sunk in the middle....maybe I just divided the batter into the wrong sizes. I guess if you like margaritas, you'll like this!

Eggplant Parmesan

I like it! I followed the recipe, except that I used what I had on hand...garlic salt, dried basil, and cheddar cheese. I just had one small eggplant, so I guessed on what the proportions would be. It made quite a delicious meal for one tonight! :) Will make it again.

Delicious Black Bean Burritos

I really like this recipe. I didn't have any cilantro, so maybe that's what was missing. I also forgot the salt, so I guess mine didn't really have much seasoning. I wish I'd thought to add cumin and salt and pepper! Still, it was quite delicious, and I added brown rice to the burrito....Wish I'd had some guacamole to dip it in!! Yum!

Chocolate Oatmeal Cookies

This recipe won me over by having "chocolate oatmeal" in the title. It's such a great combination. I actually replaced most of the white flour with whole wheat flour...and didn't use quite as much sugar (not a whole cup). And wow, delicious!

I loved it. I never would have thought to add cream cheese and guacamole to a BLT! By the way, I haven't even tried it "real" yet. I used imitation "veggie" bacon. I'm sure it's even better with the real thing!

These were fantastic! I cut the recipe in half, but forgot to halve the baking powder. And I used mostly whole wheat flour. But apparently none of that mattered, because they disappeared fast!
