Veggie Pot Pie

I love chicken pot pie, but don't eat much meat. This is fantastic. I put it in a casserole dish with "old fashioned flaky pie crust" from this site on the top only. Next time I'll experiment with other veggies...I'm sure different combinations will be just as good!

Old Fashioned Flaky Pie Crust

This is good! It worked great on top of a veggie pot pie, just a top crust. I left it a little thick since I only rolled out one crust. Used half whole wheat flour/half white, and olive oil...always trying to find healthier ways of making things that come out good!

Dry Onion Soup Mix

I thought this was great. I used it in "Oven Roasted Red Potatoes" on this website. I just didn't have low-sodium bouillon. Will be sure to get it next time.

Oven Roasted Red Potatoes

I made this with homemade onion soup mix from this website -"Dry Onion Soup Mix." Wow, it was delicious! Just make sure to use low-sodium bouillon...I didn't, and will make that adjustment next time, because it was a little salty. Either way, both recipes are excellent even though I didn't have the low-sodium.

These are good, and I will make them again! I didn't have horseradish and used dijon mustard instead. I'm sure the horseradish is good too. They stayed together pretty good.

Lentils and Rice with Fried Onions (Mujadarrah)

I really like the taste of this, but my lentils were mush. I'm assuming it's because I used brown rice, not white, and I needed to extend the cooking time for the rice. Next time I may cook them separately, or re-examine the timing. Also, I cooked up some extra onion rings because I kept eating them when the lentils were cooking! I'll just cut up 2 onions from the get-go next time.

Whole Wheat Cinnamon Pancakes

If these can taste good after I messed up, then it's a keeper! I printed out the recipe, then decided to cut it in half. I did well until I got to the dry ingredients...forgot to halve them...So I added more milk and hoped for the best. I put blueberries and walnuts in some of them. Delicious and hearty. Will make again for sure (hopefully in correct proportions).

Baked Potato

Wow..so simple and delicious! The skin was perfect - slightly crunchy, which is how I like it. I never knew if I should wrap them in foil and/or add olive oil and salt/pepper. Now I know you don't need to. Just top it with whatever you want. I used light sour cream and salt/pepper, and it was great. I love having the oven on in the wintertime. I used to make baked potatoes in the microwave...Now only in the summer...maybe.

Oven-Roasted Cauliflower

Yummy way to eat cauliflower. I added some broccoli because I didn't have a whole head of cauliflower. I just drizzled the oil over it all;I know I used less than 1/4 cup as called for. And I used a lime for juice, since I didn't have lemon. Turned out to be a great side dish!

Spinach Lasagna III

This is yummy! I know some people don't like ratings when the recipe is changed a bit, but I actually like hearing about variations, as they can be useful. I used whole wheat noodles, added mushrooms, and did not have romano cheese...and it still came out great!

Amazing Lentils and Kale

Kale and Quinoa Salad

Wow, yummy! I read some reviews before I made it, and decided to "massage" the kale, and put it together with warm quinoa. I didn't think I'd like raw kale, so the idea of wilting it somewhat sounded appealing. So I massaged the dressing into the kale, then poured the warm quinoa over it and mixed it up, adding the other ingredients as well. I had dried cherries so that's what I used instead of currants. It turned out amazing, and I bet the leftovers will be even better after it sits in the fridge a while.

Kale Chips with Honey

Undeniably delicious! I don't have a food dehydrator, so I baked them in the oven at 350 for about 15 minutes. The texture was ok - but not all were crispy, and they were starting to get browned on the edges. So next time I'll try them at a lower heat for a longer time, as suggested in the directions.

Playgroup Granola Bars

I like these a lot! I put in a small amount of mini choc chips instead of raisins. I forgot to mix them into the batter, so I just pressed them into the top after they were in the pan. I know I'll make these again, and maybe I'll try mixing in different things for variety. (nuts, dried fruit...) Update: Two days later, I realized just how perfect these are! Just the right texture and firmness. I'm big on tasting food fresh out of the oven. These are better when cooled! The only thing I might try changing is to reduced the sugar or try splenda.
