Chef John's Cauliflower Pizza Crust
I'm impressed! Very tasty. Also very time-consuming, but I will make it again. The crust stayed together very well. Wow, squeezing out the water was interesting. The dish towel was immediately wet. It wasn't until the 3rd towel that I realized I could keep the cauliflower in one towel, hold it over the sink, and twist to get out the water. (I initially thought a dish towel would absorb the water...but there is a LOT to wring out.) It all turned out great, though!
Update next day: Leftovers are great..crust still holds together. I love this recipe!
Another update: For those who want to avoid or limit cheese, you can. I made it with just the cauliflower, an egg, and some oregano. Still yummy and this way I saved calories by just sprinkling cheese on the toppings.
