Classic Bran Muffins

Great flavour. I used splenda brown sugar instead. Also used whole wheat flour instead. Didn't have buttermilk; used 1 Tbsp vinager and then filled my 1 cup measuring cup up with 2% milk.

Best Big, Fat, Chewy Chocolate Chip Cookie

Used Splenda brown and white sugar and made with M&M's. Turned out good. Not as chewy as with normal sugar, but they were chewy. I did flatten then after baked. Chilled dough... Made easier to handle.

Chewy Chocolate Chip Oatmeal Cookies

I used Splenda brown sugar and Splenda white. Had to flatten them, but flavour was good. I added a bit more vanilla because I found them a bit bland.

Empire State Muffins

Great muffins. The cranberries added a bit of tang to them. I used Splenda and whole wheat flour. Also more like 50/50 for carrots and apple to make up the 3 cups since I only had 2 small apples.

Unbelievable Fish Batter

Crispy and golden! I used about 1/2 whole wheat flour and 1/2 white. Also cut back to 2 Tbs of baking soda as recommended on here. It's a keeper!

Apple Cinnamon Muffins

Turned out really dry and a bit rubbery. Only alteration I made was adding the second egg to make it fluffier but this didn't work. I think I may have slightly overcooked them at 25 mins.

Blueberry Drop Cookies

Odd cookies. More like cake. I did flatten them before I put them in the oven. Also used Splenda and whole wheat flour. The almond flavour was good (I added a bit extra) with the blueberry flavour.

Very flavourful. Didn't have butter milk so I added 1 1/4 tsp cream of tart to milk. Worked well. Also used Splenda rather than sugar. Omitted nuts.

Cordon Bleu Chicken Rolls

Awesome recipe. I used bread crumbs rather than corn flakes. Also added some dejon mustard to the sauce and it was awesome! Super easy.
