Quiche with Kale, Tomato, and Leek - crustless & gluten free

Omit the crust and this is a keeper for my gluten-free recipe collection! This was delicious as a main meal served with soup! My husband ate 1/2 of the pie and didn't miss a crust

Healthier Beef Stroganoff III

Scrumptious!!! So glad I spotted this in the Allrecipes Magazine - made it for my son and a couple of his college buddies - they all went for third helpings. Made it a "gluten free" meal by using GF flour and served it with Chef Johns mashed potatoes - yum yum! No white wine? Try red - it was just as good!

This was quick, tasty and filling as a one dish dinner. I did not alter the recipe at all - and it was delicious as followed. I delivered this casserole along with a roll of french bread to my friends family during a difficult week.

Andrea's Pasta Fagioli

What went wrong? Is there a typo with cooking one pound of ditalini pasta? I made this recipe without any variation. I cooked 1 pound of pasta and then added it to the soup - but this was way too much pasta in the pan-furthermore the pasta absorbed all of the remaining liquid in the pot. Instead of serving soup my family complemented me on a tasty casserole dish;-)

Healthier Broiled Tilapia Parmesan

This recipe is quick, fresh and very tasty. Make it this way first to appreciate the complement of ingredients. Any changes to the ingredients - then it becomes a different recipe. Hubby said to keep this recipe in the weekly rotation.

Red Quinoa and Avocado Salad

The recipe intrigued me since I love all of the ingredients. Together it was still missing something - my husband poured dressing on it to liven it up. The dish was blah - I could have easily skipped the spinach.

Roquefort Pear Salad

Served this at a family gathering and everyone went for seconds BEFORE I even had a chance to serve the main course! It was a hit - and probably the best raves I received from my hubby who said it was Chef quality! I did burn the pecans and sugar just a bit - so I will second a previous recommendation to add 1 1/2 tablespoons of water when sauteing the sugar and pecans. LOVED IT!!
