Cream of Fresh Asparagus Soup II

I had used the tips in another recipe so used just stalks in this. To be sure they were tender and no strings, I peeled and cut into 1" pieces. When the stalk gets tough, discard. We love the fat spears and I always peel them...old Julia Child trick.

Baked Pork Chops I

Great and easy dinner. I start all meat at room temp so reduced the cooking time to 45 min and 20 min. Also heated the sauce to simmer before adding it to the dish. Put the dish in the upper middle of the oven otherwise the bottom of the meat will over-brown and dry.

Cumin Lamb Steaks with Smashed Potatoes, Wilted Spinach and Red Wine Sauce

Very good...shoulder is a problem though so next time I'll cube it and saute it that way. Spinach on the bottom, potatoes with a well for the lamb and the sauce. Very nice sauce. I think rosemary would be a good substitute for cumin, but the cumin was good.

Jeri's Spicy Buffalo Wings

Best wings! Spiced the wings overnight, turning them occasionally, and when ready to cook blotted them dry before rolling in flour. Knock off the flour and when browning them there was enough flour to make a nice casing. I put them in a foil-lined pan and let them sit, uncovered, until baking time. (I will lightly spray the oil next time) Letting them cool didn't hurt at all. They stayed crisp and the full baking time was perfect. I think the vinegar with the salts was a great idea and the garlic, butter and Franks Hot Original sauce was perfect. I have four hidden to eat later;-) /served with ranch dressing and celery sticks.

Jeri's Spicy Buffalo Wings

Brown Sugar Smokies

Did this for the superbowl...okay...but I think maple syrup would be as good. I did one technique that solved the sticky pan problem. Line a broiler pan base with foil then take a second sheet of foil about 1 1/2 times as long and crumple it up making it fit the pan but have peaks and valleys. I used individual picks for the smokies and put them standing unevenly on the foil. No sticking and mess was gathered up and tossed.

Quiche Lorraine II

I couldn't find my quiche recipe and thought this was close to it...the only recipe change I made was to run the bacon in my little chopper with 2T parm. cheese and I like the added parm flavor in the quiche. Husband said yum with the first bite.

Oven Pot Roast

I have tried scads of recipes for pot roast and fought wrapping it to keep it warm while I made gravy ... etc ... but this one is GREAT. I followed the ingredients and only added 1T olive oil to raise the burning temp for the butter. Added the peeled, halved potatoes and carrots last 1/2 hour. Thanks Becky.

Slow Cooker Texas Pulled Pork

What makes this so great is adding the pulled pork back into the sauce. Keeps it moist. Drain slightly when putting on the rolls and we used Sweet Baby Ray's BBQ sauce on the sandwich...perfect. Watch out for the chili powder..I used hot and it was really spicy but when on the bun with the BBQ sauce it mellowed out a bit.

Slow Cooker Italian Chicken Alfredo

I cut the breasts in half and when cooked, chopped them, mixed the sauce well and readded chicken to sauce. The meat was moist and cooked through. Really good. I also used fresh mushrooms, diced. The water and juices were perfect amount to thin the soup and cheese to create a good sauce. My grand kids will love this, but I may replace the water with wine to give it a little more kick and add parm cheese.

Spicy Lime Grilled Shrimp

I shouldn't give it a 5 star since I made it with flattened chicken breasts. I had made some of the Emeril's seasoning rub and used it on the chicken with the line and oil. Let it marinade at room temp. for 1 1/2 hours and grilled it. Great technique for other rub flavors
