My cooking triumphs
Several months ago, I decided to try and cook healthier. With a super picky 3 year old that is no easy task. One of the very few foods that he'll eat is spaghetti. So I made spaghetti with whole wheat noodles, ground turkey, lots of mushrooms, green bell peppers, onions, fresh garlic, and zucchini. My preschooler gobbled it up! The next time I made spaghetti, he reminded me to add "lots of mushrooms!" Mommy win.
My cooking tragedies
I really messed up apple cobbler this Thanksgiving. I don't know how since it always comes out right. :(

Banana Banana Bread
Oh. My. God. Can I say it again? Oh. My. God. I had half a bunch of bananas that were going bad, so I decided to make some banana bread. This is the absolute best banana bread that I've ever had in my whole life! It was moist and sweet and oh so good! I did add two teaspoons of vanilla and some cinnamon to the recipe. I'm thinking about buying extra bananas next time I go grocery shopping just so that I have another excuse to make this again!

Donut Muffins
These muffins were... okay. They tasted a little bland to me. My son, husband, mother, and brother all adored them! They are very moist and have a great texture. I did end up baking them in a full sized muffin pan. I also added vanilla to the mixture. While they weren't my cup of tea, I'll make them again for my family. Thanks! :)

Cold Macaroni and Tuna Salad
This is a really good pasta salad. I added half a red onion, cheddar cheese (chunked), a little bit of reduced fat ranch dressing, and some garlic and basil powder. My Mom came in just as I was setting it in the fridge and got a bowl of it warm. Then she started raving about how good it tasted! My Mom does not cook, but asked me for recipe so that she could make it herself! You've got a winner here.
