Chicken Stir-Fry

Reviewed: Aug. 10, 2011
Fixed as written, except used fresh garlic and ginger. There was no extra sauce when everything was added together. It wasn't dry, just not saucey. Flavor was very good. Husband said it was "very healthful". Not a raving review. I will keep it in my rotation and try to jazz it up abit, Double the sauce too. Oh, I had packaged stir fry veggies, so had snow peas, broccoli and shredded carrots and bok choy. I added sliced onion.

Fantastic Chicken Burgers

Reviewed: Aug. 7, 2011
Fixed as written with the exception of omitting the cilantro, as we don't like the taste. Doubled the recipe and used a whole envelope of guacamole seasoning. Ate plain, no bun, cheese or salsa and it had a great flavor. Will try with ground turkey too.

Slow Cooker Chicken Parisienne

Reviewed: Aug. 7, 2011
Fixed as written. The first words out of my husband's mouth when he took his first bite was, "This is really good chicken!". The sauce was quite runny, even though I turned the temperature to high for 1/2 hour. I poured the sauce over brown rice and the flavor was wonderful. Will keep in my Favorite file!

Baked Halibut Steaks

Reviewed: Jul. 21, 2011
I am giving it 5 stars, even tho I didn't use halibut. I didn't have any, so I used tilapia filets. The flavors were wonderful and I plan on using this with halibut soon. A keeper for fish.

Crab Salad Supreme

Reviewed: Jul. 18, 2011
Use 1 tsp dijon mustard and added it into the dressing. Mixed all the dressing separately and just drizzled over the crab mixture.

Rice Balls a la Tim

Reviewed: Jul. 16, 2011
OK, I am going to rate this on how I fixed it. I know it would be 5 stars fixed as written, but we are on a diet and I didn't want to use all the cheese. I had sticky sushi rice left over, so used that with a small amount of parmesan cheese. I used Italian seasoned ground turkey(1.25 pounds). The sticky rice held everything together nicely. I also had bread crumbs from a loaf of 3 cheese bread from the deli and I used that to roll on the balls. I also had leftover homemade pasta sauce, altho not enough to use for leftovers. They were very good and very filling. Once we lose this last 5 pounds, I will fix as written with brown rice and the cheese. It will probably send this beyond 5 stars!

Perfect Sushi Rice

Reviewed: Jul. 15, 2011
This rice was awesome! Just like you get when you order sushi in a restaurant. I had to go to an oriental market to get the rice and it took alot of rinsing before the water was clear. I reduced the vinegar and by half and the sugar just a tad. I fixed the rice in my rice cooker and used another poster's trick of putting my hand on top of the rice and adding water until my hand was covered. It was the perfect amount of liquid. Wetting hands when mixing the cooled rice and liquid is essential. Use this rice when any recipe calls for rice balls of any kind!

Thai Spiced Barbecue Shrimp

Reviewed: Jul. 15, 2011
This was just OK. I thought the shrimp rather tasteless. I think it may have more flavor if I saute it in the marinade. There really wasn't anything in the marinade that kept the sauce on the shrimp during the grilling. Maybe more curry paste would help bump up the flavor. I will keep it in my files, but doubt I will fix again. Just too many wonderful recipes on this site to repeat an average recipe.

Cottage Meatloaf

Reviewed: Jul. 14, 2011
My husband took one bite and said "WOW". This is our new favorite meatloaf recipe. It has just the right amount of spice and tomato. I used quick oats instead of bread crumbs, omitted the tomato juice, increased the amount of ketcup and added worchester sauce. Also used egg whites instead of whole eggs. It was absolutely wonderful!!!

Shoyu Chicken

Reviewed: Jul. 14, 2011
This was simply fantastic! We just couldn't stop saying how good it was....long after the meal was over! I marinated the chicken about 18 hours(from noon, overnight until dinner then next day). I think it makes all the difference. It definately goes into my favorites file!

Bella's Rosemary Red Potatoes

Reviewed: Jul. 8, 2011
These were really yummy. I used olive oil, no butter. I put them in a zip lock bag with the flavored oil and tossed. I covered them for 20 minutes, then uncovered for another 10. They were perfect.

Chicken Salad

Reviewed: Jul. 5, 2011
Top rate chicken salad recipe! Didn't have grapes, so substituted a chopped apple. Also didn't have water chestnuts, so used sliced almonds. I think this recipe would stand up to adding any ingredients, like sliced radishes, cherry tomatoes, etc. The dressing has such a nice flavor, it would compliment any additions!

The Original Potato Salad with Real Mayonnaise

Reviewed: Jun. 25, 2011
This turned out as expected...a good potato salad. Nothing special, but good. I think you could add things to it to make it your own...chopped pickle, radishes, olives, etc.

Asian Marinated Pork Chops

Reviewed: Jun. 25, 2011
The first thing out of my husband's mouth when he took his first bite was "fantastic!". I followed the recipe exactly, except scaled it down to 2 pork chops. For those of you who like a little heat, you could increase the red chili paste. As written, there is no heat, just lots of wonderful flavor. This marinade would be good on just about ANYTHING! Into my favorite's file this recipe goes! Thanks!

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

Reviewed: Jun. 17, 2011
Made using 2 pounds of ground turkey. Kept the rest of the measurements the same. Just the right amount of flavor...no overpowering heat or heavy seasoning. We eat our burgers without the bun, so I just put the sauce on the burgers. We also grilled them. I mixed up the seasoning and put the mixture in the fridge for about an hour before forming the patties. They stayed together, no problem. Great burger recipe. Will go into the favorites folder!
