Country Cottage Potato Salad

Reviewed: May 27, 2012
Increased amount of potAtoes and used russet potatoes. Decreased amount of mayo and cottage cheese and it was still creamy enough. My husband couldn't believe it wasn't store bought. I think next time I will add celery and maybe radishe for color and crunch

Creamy Slow Cooker Marsala Pork

Reviewed: May 3, 2012
Used 6 bone in pork chops and baby portabella mushrooms, sautéed the veggies after browning the chops. Used leftover red wine as that is what I had and cooked on low for 6 hours. Incredible aroma while cooking and outstanding flavor!

Low Fat General Tso's Chicken

Reviewed: Apr. 23, 2012
Just the right amount of heat! Had 2# boneless, skinless chicken thighs and could have used more egg wash. Maybe add more water to it

Mushroom Blue Cheese Turkey Burgers

Reviewed: Apr. 13, 2012
Great burger! Doubled the ground turkey, used 3 T soy sauce, red onion, one can mushrooms, chopped and 1/4 c blue cheese as that is all I had. It was wonderful this way, I think more soy sauce would have made it too salty. The cheese gave good flavor, but I think I would do 1/2 cup to 2# ground turkey. The recipe is very forgiving, sonic you don't have exactly what the recipe calls for, go ahead and make it anyway...you won't be disappointed!

Chicken Asparagus Roll-Ups

Reviewed: Apr. 13, 2012
The first thing out of my husband's mouth was "WOW!". This recipe is good enough to serve company and the presentation is beautiful. It is very rich and a little goes a long way. I would say you could halve the breasts after you flatten them and that would be enough to serve one person. A keeper recipe!

Wonderful flavor! Halved the soy sauce, doubled the water. Returned the grilled, cooked chicken to the reduced sauce for a few minutes to infuse the flavor again. Wonderful!

Pollo Fajitas

Reviewed: Mar. 11, 2012
Pounded chicken breasts flat, cut into strips. Followed ingredients except added more garlic and added everything but onions, pepper and oil and marinated for 3 hours. Very good flavor, but think I would like the chicken grilled for better color.

Orange-Chicken Rice Bowl

Reviewed: Feb. 23, 2012
This was fantastic. The flavors were outstanding. I followed other reviewer's suggestion and doubled the asian dressing and orange juice. Also used boneless, skinless chicken thighs as that is what I had already thawed. Even better the next day!

Oven Fried Chicken IV

Used panko bread crumbs instead of cornflakes and plain greek yogurt instead of sour cream. Also used boneless, skinless chicken breasts. Chicken was very moist and flavorful. Next best thing to greasy fried chicken. We loved it!

Chile Pork

Reviewed: Feb. 4, 2012
Followed recipe as written. Followed other posters suggestions and spread in single layer in oiled shallow casserole and baked. Baking time depends on the size of your pork cubes. Mine were about 1 inch and I bled a little less than 1 hour. Served with baked potato and salad. Very good

Margherita Pizza

Reviewed: Feb. 4, 2012
Rating this on the changes I made. Used prepared pizza dough and fresh tomatoes, sliced and drained for 30 minutes. I laid the tomatoes on the pizza dough, topped with fresh basil leaves and placed fresh mozzarella over all. I found fresh mozzarella packaged in a roll, so all I had to do is unroll it and tear it in pieces. I have a pizza pan that has holes in it so the crust gets crispy on the bottom too. I baked it for 30 minutes at 400 degrees and it wasn't done on the bottom, so next time I will up the temp to 425 and keep the time the same. The favors were very close to what we had in Italy

Grandmas Chicken Chardon

Reviewed: Feb. 1, 2012
My husband said the mushrooms make the dish and he was right. I halved the recipe and doubled the butter sauce, but not the mushrooms..next time I will. I used Butter Buds liquid substitute(couldn't tell the difference between that and melted butter but zero calories) and added chopped garlic to the liquid. It was delicious and will be added to my favorites file
