I really liked this! We've made something similar to this with egg, flour and breadcrumbs, but with the olive oil and garlic as the base then the breadcrumbs and Parmesan,this was awesome! The olive oil keeps the chicken tender and even with as much garlic as I actually added (more then recommended for 2 breasts of chicken) the garlic wasn't overpowering. I let the breadcrumbs get crispy in the oven (2 thin breasts of chicken, 30 min and the breadcrumbs crisped right up). It gave it that extra crunch. I saw that the recipe picture was served with veggies, which is probably a better idea. I served it with some linguine (just olive oil and parm mixed in, no sauce) and it was really good! My husband's Italian so I had to do the pasta! I'd definitely recommend this. Try it. It's so quick and easy.
