Cauliflower-Cheese Soup
I thought this was very good and tasted very rich as if it were made from cream and not skim milk which is what I used. Like the others, I also used broth instead of water and I used the food processor to chop veggies very small before boiling. I can't imagine the fat content listed is right since the only real thing with fat would be the better and that doesn't seem like much better for a full batch of soup. With that said, I think you could easily leave out the cheese b/c it was plenty tasty without it.
