This is an excellent recipe. The cookies were soft and had plenty of flavor on their own even without icing. The only change I made to the recipe was the additional 1 teaspoon of vanilla like other reviewers mentioned. We only refrigerated the dough for a couple of hours, and it was perfectly fine. Other reviewers mentioned that you should mix the flour in by hand (not with a mixer), which is what we did and did not have any problems. The cookies kept their shape when we only rolled out the dough to 1/4 of an inch--our first batch was thicker than that and the shapes puffed up a bit. It is a perfect Christmas cookie!
