Chicken Florentine Casserole
FANTASTIC! Family loved it. Used fresh spinach (uncooked) cubed cooked chicken and real bacon instead of bacon bits. Served it over Fettucine pasta. This is a keeper!

Taco Casserole
Very good recipe. I did tweak it just a little. I added a can of Mexicorn and a can of kidney beans. I also added some roasted annahiem peppers I froze from our garden. I didn't have any tortilla chips but I'm sure that would have given it an extra crunch. My husband is a very picky eater and he loved this as well. It's a keeper!

Baked Dijon Salmon
I have made salmon many times and used many different recipes. This by far has been my favorite. I used Panko instead of dry bread crumbs as others suggested. It was nice and crunchy. I also used walnuts instead of pecans since that's all I had. It Was ABSOLUTELY DELICIOUS!!!
