Slamtastic Eggplant Sandwich

I'd highly recommend baking or sauteing the garlic before mixing it into the mayo. Raw garlic is very harsh.

Big Soft Ginger Cookies

Very good! I'm not sure if I added a little more flour, or it was just the impact of using whole wheat flour instead of processed white flour, but I didn't find the dough sticky at all. The cookies came out of the oven rather puffy, but flattened beautifully on their own as they cooled. This is a very easy recipe, and the results are delicious!

Corn Fritters

I really loved this recipe. I made two batches for my birthday barbecue yesterday. One batch I just doubled the sugar as others suggested, and used chopped apples that I canned two years ago. The apple fritters went over a hit! My second batch I wanted to best of both worlds - hush puppies and corn fritters - so I used a 50/50 blend of cornmeal and flour. I used slightly less than half a cup of cornmeal to half cup of flour, because my research says that 3/4cup of cornmeal substitutes for one cup of flour in recipes, so I eyeballed it. I just used frozen corn, thawed and drained, and the results were a huge success. Can't wait to try a variation with cornmeal, parm, and crab meat!

Blueberry Coffee Cake

I was looking for a fruit coffee cake recipe with no sour cream, as I didn't have any handy. This one came up, and I thought I'd try it, but after reading the reviews it was clear they needed more spices. I added vanilla and cinnamon, as well as the allspice. I was using a bundt pan and my homemade canned apple slices, which I lightly mashed so they would layer nicely. After mixing, the batter looked more like biscuit dough, so I added more milk. Not sure if our elevation had something to do with it? We're up very high in Calgary (1084m/3557ft). The result was delicious and disappeared right away. This time I'm making a double batch, as it didn't fill the bundt pan very well, and I'd like to have seconds!
