For the first 17 years of our marriage, I did all the cooking. For the next 23 years, my husband did all the cooking. Now that we're retired, it looks like it's my turn again! Thank goodness I've found AR!! UPDATE: For the first three years of retirement, it was the same old, same old recipes. (I've always professed that 'I hate cooking') For the past three years of retirement (since finding AR), I've actually started enjoying cooking. I now really look forward to trying new recipes (mostly recommended by the peeps) and ... oh my goodness, I'm even taking pictures!! lol

Luscious Lemon Triangles
One of the best things about going to Arizona each winter is the abundance of fresh lemons. Of all the "lemon" recipes I have tried, we much prefer this one! I also make it in Manitoba with frozen lemon juice I have squeezed from my AZ lemons. Even without the zest, the lemon flavour is full on. I agree with Naples, using 1 1/2 times the filling is a good crust to filling ratio. Thanks to Lori, I have found my favourite lemon recipe.

Iced Pumpkin Cookies
What a welcome change from the usual "really sweet" cookie. I had enough leftover pumpkin (from the Pumpkin Cake III on this site) to make this recipe. After reading the reviews, I made a few minor changes ... I know, I know, why rate it then ... well, if you're interested, read on. I didn't have enough softened butter so I added about 1/8 cup of applesauce to make up the cup required. I used 3/4 c white and 3/4 c brown sugar and added 1 c of dried cranberries. A small cookie scoop equaled 70 cookies, baked on parchment paper for 12 minutes. I flattened some with the back of a wet spoon and left some of them "round". The round ones could have used another minute in the oven, I think. I had leftover cream cheese glaze which I drizzled on some of the cookies. Personally, I loved the subtle taste of the cookie better without the cream cheese. Maybe the glaze in this recipe would complement the cookie better. Thanks, Gina, for a lovely basic recipe.

Simple Avocado Milkshake
Quick and tasty! If including a banana (frozen makes milkshake nice and cold), be sure to adjust the amount of honey ... riper banana = less honey. Thanks for the recipe Sugar High.
