Chicken Pot Pie IX

I only had one pie crust so I used it on top and the family liked that better since the bottom crust just gets soggy. But it was a bit runny this way and with doubling the sauce. Because of this and the fact that there wasn't enough for the four of us, next time I will DOUBLE EVERYTHING and put it in a large casserole dish with just the crust on top. My husband said it was better than Marie Callender's! It took more like an hour to prepare, but was well worth it. The butter is what makes it!

Cool Cucumber Salad

This needed a little more flavor for my taste, so I added at least twice the amount of the red wine vinegar. It is definitely a nice cool summer salad.

Brisket with BBQ Sauce

AMAZING BBQ sauce!! I made this recipe tonight and everyone loved it! But the meat was too salty, so next time we will use garlic powder and onion powder. I wasn't sure if I was to pour off the juice before adding the BBQ sauce so I left some of it in and removed most of it. This was good but still a little runny. I also added 1/2 t. fresh ground pepper to each the meat and sauce. We like more spice so this was perfect for us. This is a new favorite!

Taqueria Style Tacos - Carne Asada

EXCELLENT carne asada!!! We usually drive a ways to our favorite Mexican market to buy their carne asada called "marinaded flap meat". I decided to see if I can make it myself so we can have it more often and not have to drive so far. I found this recipe and it is even BETTER than the Mex market's. I just used the marinade and did not make the salsa because the meat has enough flavor. The only difference is that I used flap meat and added the chopped cilantro to the marinade since that is what the Mex Market does. We make it into burritos by cooking sliced onions, bell peppers, and tomatoes in olive oil, then adding it to the meat. Oh, I forgot to say that the meat MUST be barbecued to get the full flavor. Then slice before adding to the burritos.

Hamburger Rice Soup

FINALLY! A new dish that my picky son likes. I used the beef broth instead of water and added more rice. The reason I rated it with 4 stars is it was very good overall. I give 5 stars for recipes that are great. We will make again. Thank You!
