Cajun Crawfish and Shrimp Etouffe

Used only shrimp. Kept "heat" on the side because of the kids. However I did add a little cayenne. Also used clam juice instead of fish stock. Awesome!

Cavatappi with Spinach, Garbanzo Beans, and Feta

AWESOME! This recipe is very forgiving. I didn't have spinach so I added some of Trader Joe's Southern Greens Blend instead. Didn't measure, just eyed it. Also added beans with pasta for the last 5 min to soften them up a bit, mas suggested. Added Scarlet Runner beans because I had them from the garden. Added greens after drained pasta so it wilted. Yummy, Yum, Yum. Oh, i did the dressing in the food proc. Used rigatoni, had no cavatappi. Kids loved it too! Lemon is such a nice touch.

Asparagus and Mushroom Puff Pastry Pie

This was great! I added more mushrooms and garlic because we love them. And I took the advice of another review and blanched the asparagus. The mushrooms I sauteed in a little less butter and be sure to let all of the moisture evaporate before you combine the ingredients. I did not have the puff pastry, so I just used pie shells and sliced in the vents. My kids ate 2 slices each! I will make this again!

Peach Cobbler IV

It is still not exactly what I'm searching for, but it will do in a pinch. I used 29oz peaches with 1/2 thw juice. Also added a little vanilla and cinnammon, and used evaporated milk. I'll give it 4 stars because family loved it.

American-Style Red Beans and Rice

I usually make red beans and rice with sausage. I did not have any so I tried this recipe. Added a little cumin,and lots of garlic. Everyone loved it. Kids too. Do not add too much water, though, it makes them more creamy as they cook.

Spicy Sausage and Rice Casserole

This was good. I made it ahead of time and just put it in the oven when I got home. I used vegetarian "sausage" and it worked fine. I did add a little bit more chicken stockduring cooking time, to cook the rice, but I think it would have been okay if I hadn't drained the diced tomatoes I used. I took another reviewers advice and mixed in black beans and added cheese on the top towards the end. I kept wishing I had added olives too! Thanks! This is a keeper! Kids ate too. (6 and 8 yrs old)

Hot Water Cornbread

This is one version of Hot Water Cornbread. I was taught to just buy a cornmeal mix, add boiling water, until just mixed and fry in a little grease. It works just as well.

Actually Delicious Turkey Burgers

These were great. I only used about 1 1/2pds of meat so I adjusted everything. I added I whole egg, and a little Soy Sauce. These were the best Turkey Burgers ever!, very moist. Thank You!

Beef Stew II

This was great!! I didn't have a slow cooker,used a large pot, just cooked it on low for 2-3 hours, until it was right. I used soy sauce, and only had about 1 1/2 pds of meat so I just "eyed" the rest of the ingredients. You really could add almost ant veggie you wanted to it. I added mushrooms, next time maybe green beans? So warm and yummy on a cold night. Great.

Jenny's Jambalaya

This was great! I ALWAYS mess up Jambalaya when I make it, but this was excellent! I used what I had. I used a chopped green pepper, celery and chopped garlic(4 cloves, we love it!)with the onion. I used pieces of chicken,(drumsticks and thighs), and I only drained 1 can of the stewed tomatoes. I used andulluie sausage, shrimp, and brown rice. So, the brown rice took a little longer to cook. At the end it wasn't to dry and it had a little gravy which was sopped up with corn bread. This was the best Jambalaya ever! Next time maybe I'll add some Okra? Thanks for the wonderful meal.

Basic Microwave Risotto

Wow!!! What a surprise! I've been making risotto for years and it is always time consuming, (which I don't mind.) and hit or miss with the consistency. This recipe was great. I added a little more garlic because we love it and I added carmelized onions when it finished cooking. When I removed the cover after the last 10 min, I thought it was too watery. But, when I added the cheese and let it sit with the lid on it was perfect. My husband loved it. I didn't tell him it was from the microwave, he's a purest. I can not wait to try it with other additions and double the amount. For time and taste, it gets my first 5 stars. Thank You!!!

Sophie's Zucchini Bread

I made this yesterday afternoon. It was inhaled and gone by 8am this morning. My 6 yr old daughter wanted it in her lunch box and my 4 yr old wanted it for breakfast. My husband ate it all night and this AM. A couple of small changes, I added 1/2 cup less sugar and will probably add even less next time and I reduced the oil and added applesauce instead. I also made it in a 9x13 pan. It definitely will be made again. Thanks!

Breaded Chicken Fingers

This was pretty good. I didn't have buttermilk, only soy milk and it worked fine . I also used chopped garlic instead of garlic powder. It was very moist. The key is the marinating.

Cottage Cheese Chicken Enchiladas

This was so good. I made this dish one morning. Covered it and put it in the fridge, then popped it in the oven for dinner. Everyone loved it.( Young kids too ! ) I used spinach flour tortillas, and green sauce. I didn't put the extra meat on top either. It seemed like to much. Next time I'll use some garlic too. And I want to try the corn tortillas. But, It was fabulous as it is. Not one drop left ! Thank You !
