Pumpkin Hummus

Not a huge fan of this recipe without tweaks, but I feel like its not because its a bad recipe, but more of depends on you taste buds kinda thing. I ended up drastically decreasing the spices and lemon juice. I increased the garlic, plus added garlic powder (I love garlic), added cumin, more salt, and chipotle powder. I think I'm just not a fan of sweet hummus, but to each his own, it was great inspiration as I never would have considered it!

Swimming Angels

This was just okay. The sauce was great in the pot, but once I put it over the rice and tofu, for some reason it lost a lot of its pizzazz. To be fair, I did make some of the changes suggested by others. I added a can of coconut milk and ginger. We ended up adding lime juice, soy sauce, and peanuts to our plates and this helped. I will probably make the sauce again and use it as a base. Still definitely worth the try

Wine and Dijon Marinated Pork Loin

This was excellent! A little spicy for our taste, so next time I will probably cut out the pepper all together. My husband and I liked it like that, but our little guys, not so much. I served this over buttered egg noodles and wish I had doubled the marinade because it was so good we were practically licking the plates! I also shortened the cook time by putting it in my pampered chef deep covered baker in the microwave. It sounds crazy, but comes out just as tender, juicy and yummy!

African Peanut Soup

This is a new favorite in my household and by everyone we've asked to try it. My hubby has to have meat so I also add two seasoned, shredded chicken breasts. I upped the rice the second time we had this to 1 3/4 cups. I've added shredded carrots and this time am adding sweet potato. I also have been using chicken stock and took others suggestions and used salsa instead of tomatoes, which hubby is not a fan of. I also upped the peanut butter. We top it with cilantro and lime juice. Its actually pretty similar to pad thai, but in a soup. We LOVE this!

Mock Coconut Pie (Spaghetti Squash Pie)

Surprisingly yummy! I took other people's advice and only used 1/2 cup of sugar. Also used lime juice instead of lemon, but I don't think it really made a difference as far as taste goes. Even with the 1/2 cup of sugar, this was still pretty sweet, so I can't imagine using the full cup! I think next time I will use 4 eggs instead of 3 because I just like it to be a little more custard-y. Definitely give this recipe a shot because you'll be pleasantly surprised!

Tofu Stroganoff

Mostly I'd say this recipe was edible. I just think it needed something and I'm not sure what that is. If I make this again, I'll use beef boullion as someone else did and omit the soy. As it was, I did make a few changes. Fat-free cottage cheese and reduced fat sour cream, more soy and more garlic. I also used less onion than called for because hubby doesn't like the texture. I felt that the taste of the mushrooms was completely lost so maybe more mushrooms? Hubby hasn't tried it yet, but I'd be willing to bet he'll agree with me. Really wanted to like this in spite of my apprehension over trying this recipe, but I'm just not a fan. As it has so many good reviews, it may all just be in my own personal tastes.

Brown Rice and Black Bean Casserole

Thought this was an excellent recipe! Loved by all in the house including picky DH and 3 yr old DS. It will definitely become a staple and I will probably start to double the recipe to freeze. Took others advice and doubled the rice and used extra carrots. Also, did not have cumin, but didnt' feel it was lacking. I cooked my chicken in Adobo in the oven, so that may have helped. Also did not use swiss, but an italian cheese mix that I had on hand. Probably used less cheese than it called for just to help our middles, but still thought this was great! Too bad hubby beat me to the leftovers the next day grrr

Crock Pot Portobello Chicken

Excellent and it's so basic and easy! Took other's advice and used a fat-free dressing (Italian Caesar) and served over brown rice. So yummy!

Quick Quiche

Thought this was an excellent and easy quiche recipe. Its been years since I made a quiche so I can't remember of flour goes in the filling, but I didn't miss the crust at all because of the flour in it. The flour sunk to the bottom and formed its own crust. I also used whole wheat flour to make it a little healthier. I made ham, broccoli, cheddar, doubled the recipe and threw one in the freezer for later. Am definitely looking forward to eating this again at a later date.

Glazed Tofu Meatloaf

We loved this recipe! I'm not a big fan of meatloaf, but the hubby is so I'm always on the lookout for something a little different. This totally hit the spot. I took others suggestions and only used one egg and only 1.25 lb of ground turkey. As others have said, the sauce is really what makes it and I doubled it. Served it over brown rice and we were really impressed with the flavor! Picky hubby (who actually knew about the tofu!) and 2 yr old ate it up. This is a winner and I'm about to make a freezer meal out of it for later :)

Apple Butter Pork Loin

I thought this recipe was pretty good, as did our guests. Everyone says its like eating Christmas. I'm pregnant, so it may just be that my taste buds are off, but I felt it needed a little bit of something more. I'm rating this a month or so after I made it, so I couldn't say exactly what I thought it needed at the time! I did make a cornstarch slurry to thicken the sauce and poured that over some couscous. Again, guest loved it and hubby who doesn't like sweet with his savory, gobbled it up!

Portuguese Pork with Red Peppers

We loved this pork! Like others, I couldn't get over how tender it came out. I served it with pine nut couscous and it was an excellent and healthy meal. So simple, yet so delicious :)

Morning Glory Muffins I

Thought this recipe was excellent and a great way to get in veggies and whole wheat. The only changes I made was to use golden raisons and coconut extract because it was all I had on hand. It made way more than 18 muffins, closer to 25, I'd say. This was a nice bonus as my 2 yr old, hubby and I gobbled them down. Will definitely be making these again!

Easy Chicken Posole

Excellent! My husband loved this, tomatoes and all :) (And he hates tomatoes, so that's saying something). Will definitely be making this again. Cut the recipe down, but will have to make it bigger because we fought over the leftovers the next day because I hadn't made enough. Absolutely loved it!
