My favorite things to cook

I am taking nutrition, specifically dietetics, at university and am a vegetarian so I'm into cooking healthy, vegetarian food. However, that being said, I have a passion for chocolate and dessert!

Apple Walnut Salad with Cranberry Vinaigrette

Loved this, but I made an alteration and will make another the next time I make this. I did not put the red onion in the dressing as the recipe says, I simply sprinkled it on top of the salad when I was putting it together. I probably only used about a 1/3 of a cup, too. Also, the dressing was a little too thick for our family's liking so I would reduce the sugar (the dressing thickening agent) to 2 tsps.

Low-Fat Blueberry Bran Muffins

I made these twice now, once following the recipe exactly and once with several modifications. My first batch were good, but too sweet for my liking. I used a little less than 1/2 of a cup of brown sugar the second time as well as used all whole wheat flour. The second batch turned out great. I may use even less sugar next time. But, nonetheless great, great recipe! Thank you for sharing.
