Lit'l Smokies® With Bacon

You can't go wrong with bacon! I omitted the brown sugar entirely (I don't care for sweet foods). If I were to make again, I think I would rotate the pan halfway through to ensure even cooking - some of the bacon ended up super crispy and some of it need to cook longer.

Roast Chicken with Rosemary

German Chocolate Cake Frosting II

This was delicious and the perfect topping to the German Chocolate Cake III recipe. I had the same problem as some of the others where the frosting wasn't thickening -- it was because of the low heat. Turn the heat up to high in the second half of the cook time and stir quickly to thicken the frosting.

Grilled Chicken and Pasta Salad

This was pretty good. It was a nice, light dinner. I added a bunch of things (eggs, olive, etc.) and there were a lot of flavors competing with each other, so maybe next time I won't use so many different ingredients. I used a vinaigrette dressing.

Fried Ice Cream

This was pretty good, but either the corn flakes soak up the oil too much or I left them in too long because it tasted a little too "oily". I would definitely make again, but maybe try a different coating (another person used crushed up vanilla wafers - I might give that a try).

Burgundy Pork Tenderloin

This was very tasty and so simple to make! It took longer than the recipe called for -- about an hour to get to 160 degrees. I would definitely make again. The wine gravy is wonderful.

Mashed Potato, Rutabaga, and Parsnip Casserole with Caramelized Onions

This is one of my favorite vegetable dishes. It's absolutely delicious. I often make this with only rutabaga or turnip, instead of the combination.

Poblano Chile Enchiladas a la Gringa

This was delicious! I couldn't find poblano chilis, so I used jalapenos -- gave the dish quite a kick! I also popped this in the oven for about 5 minutes after they were rolled to let the cheese melt.
