BDukes Lima Beans, Cabbage and Smoked Sausage

Very tasty pot of beans. My limas turned to mush, however. Next time, I won't just set the timer for 90 min. and not check them. I am sure 60 min. would have left some texture. I used bacon instead of ham hock and added mustard greens instead of cabbage, because that's what I had. Will make again. Love a good bean recipe.

Microwave Spiced Nuts

Oh, yum! Made these out of toasted pecans and walnuts using Brown Sugar Splenda blend before I went on a girl's weekend. They were a hit and we couldn't stop eating them. I did add a generous dash of cayenne, and that was a good addition. I especially appreciated a 'no salt added' option for fancy nuts. Would make a great gift. If they are in your kitchen, you will just keep eating them!

Curry Chicken Salad

Quite tasty way to use up leftover chicken. Easy ingredients. Whole family of adults enjoyed it. Put in just a touch of hot sauce to add a bit of zing. Flavor develops over time. Will do again.

Zucchini Coleslaw

This was a tasty salad that is a twist on coleslaw. I didn't have radishes and I added a squeeze of lime over my serving. My husband liked the combination of vegetables, which lessened the intensity of an all cabbage slaw. We served it with fish tacos, with which it went quite well.

Hearty Rice Salad

I had to substitute some things and leave out others because I did not have them. However, the dressing is very tasty as written. One thing I did learn: cool the rice before mixing. It melted my cheese cubes. Oops! I will make again, but I'll be more patient next time.

Mayan Couscous

Delicious! I followed the recipe except I substituted quinoa for the couscous and replaced the corn (didn't have any) with sliced black olives, which went nicely. I did slightly cook the onions and added a handful of sliced green onion tops. As suggested elsewhere, I squeezed every last drop out of 2 limes. Good both warm and chilled. A hit with the hubby, who is a traditionalist. Filling and satisfying, I will be making this again.

Barley and Mushrooms with Beans

Terrific! I used the 'ingredients search' to use up what was in my fridge before leaving on vacation and found this recipe. Added some carrots, used canned pinto beans and added a splash of white wine to the broth. Added the celery later to preserve crunch. Overall a very satisfying winter meal in a bowl. Froze two meals for later. Will make again.
